Made this recipe my first year working when I was very broke and got winter melon in a soon to go bad package. It’s a fond memory as the soup was comforting in November. Now I do a little better but still appreciate the simple dishes you let us discover that make humble ingredients sing. I’m looking forward to making it again soon. I made the winter melon meatballs soup. It was so good. My family members and my grandchildren loved the soup so much. I did not have winter melon at that moment, so I used Cabbage instead. Wow! This recipe is very good.

Yes Rachel, dried scallops can be a great substitute. You need to pre-soak them before making the soup. Happy cooking!

What can be used as substitute for the papery shrimp, in case of shrimp allergies? Will dried scallops do the trick?

I love this recipe! Soup is really comforting, ideal for a dinner on a cold winter evening. Had a hard time finding a winter melon in the UK, as most of the shops do not ship chilled/frozen food because of covid, but eventually found one. I’m glad that you can freeze it cause now I’m going to stock on it!
