I made this a couple evenings ago, came out great. I didn’t have any pickled chilies around, or rather not mild ones, so I used some chili garlic I made a while ago using your recipe, plus chopped deseeded fresh chillies. As mentioned before, the results were brilliant. Very tasty indeed.

Hi Paul! As I described in the post “gently rub the beef until no more liquid can be seen”. The marinade is fully absorbed by the beef, so when you add the beef to the wok, there shouldn’t be any liquid/sauce left in the bowl.
