I suggest you keep the soup for up to 3 days in the fridge and reheat it until piping hot before serving. Use 4 cups (1000ml) of stock if not using dried mushrooms and dried shrimp. Happy cooking!

To make it vegetarian, you can simply skip dried shrimp. Follow the recipe instructions above and replace the 2 cups of hot water with 2¼ cups (560 ml) of stock. Happy cooking!
