Hi, I was wondering if you need to add salt to subsequent uses of the mother sauce? Another site said the chicken will absorb the salt, and so you need to replace it. Homemade soy sauce chicken sure is a lot cheaper than buying it ready made, and it’s tastier, too!

this is the 4th recipe I have tried. I have 2 students living with me from Szechuan province and so try to cook food they like. I loved the oyster chicken and a couple of the beef recipes. But this one I found way too salty. I’m using Lee Kum Kee light and dark soy – wondered if I replaced the light soy with LKK lower sodium soy if it would make a difference. Either that or I will reduce the soy and increase the water. The chicken itself was delicious and very moist but I could add very little sauce to it before it became too salty.
