To prepare in advance, you can choose one of these methods:
— Keep the raw dough in the fridge. Cut and cook it the next day. In this case, use slightly less water for the dough as it becomes softer over time.
— Cook the noodles, then rinse them under running water to cool. Drain them well and coat them with a little oil to prevent sticking. When you are ready to serve, put them into boiling water briefly.

Can these be made in advance and held for use another day? If so, wouldn’t be better to hold the raw dough until ready to cook, or cut the noodles and cook the next day, or cook the noodles then toss with oil then refrigerate and rewarm for later?
