Hi Edyta! The picture shown on the page appears to be the regular fermented tofu. Though stinky fermented tofu exists too (sorry I’ve deleted the link as it’s not allowed in the comment section).
You can use the same method explained in my recipe for Bok Choy Stir-fry to cook Gai Choy. Hope this helps!

Also for the green part: I bought something green, thinking it was a water spinach but It is not, it is, according to google, mustard cabbage/gai choy/kai choy How can I use this veg?
