This is another good one. I made it some time ago and we enjoyed it. Nice to not use much oil every now and then. Eggplant is very good steamed and we ate it hot with white rice.

Just tried this last night with several fresh-picked Japanese eggplant from my garden. I didn’t have garlic paste, so I used some leftover roasted garlic and mashed it. I also didn’t have chili peppers, so I used a scant teaspoon of prepared chili paste. The eggplant steamed beautifully and the dressing was spicy, yet refreshing on a hot summer day. I paired this with some chicken & vegetable spring rolls for a perfect light supper. Will definitely make this unusual salad again. Thanks!
