Fresh wood ear mushrooms are a great find! You can use them like dried ones—just skip the soaking step. Happy cooking!”

I have never eaten them before. Any recommendations on best way to prepare the fresh ones? Thanks.

Typically, the packaging recommends consuming dried wood ear mushrooms within 2 years. In reality, they can last even longer if stored in sealed bags in a dry environment away from sunlight. However, I can’t provide a definitive assessment without inspecting your mother’s wood ears. I suggest soaking a small batch for a test. If they appear normal in terms of appearance and smell, they’re probably safe to eat. Nevertheless, if you have any doubts, it’s best to be cautious and avoid consuming them.

My mother was from Jiangsu and after she passed at age 106, I’ve been trying to re-create and log as many of her dishes that I can remember. This is one of them. My question: how long are dried mu er good for, if stored in a cool dry place? She had packages of them and I have no idea if they are any good after so many years. Thank you for your advice.

This dish is usually served with other savoury dishes and plain rice. For example, the day when I photographed this recipe, we had Napa cabbage stir-fry, braised chicken wings, tomato egg drop soup with it. There is no set (or preferred) combination. Please feel free to make your own choices.
