Thank you for trying out my recipe and sorry to hear the oily mess. Here is how to prevent the splashing: After cooling the pork belly chunk in water, drain and pat dry it with paper towel thoroughly to make sure its surface becomes as dry as possible. After slicing the pork, pat dry the pieces again to remove any excess water. Hope this helps, Mark!

But I have one question. Is there any way to stop the pork from popping and spitting explosively in the searing step? It makes a terrible oily mess of my stove and floor, and I get burned by the flying oil droplets.

Great recipe–the recommendation on the broad bean with chili oil made all the difference. Growing up in NY I remember the dish with cabbage and bell pepper along with the leek in the Szechuan restaurants there–I added that and it tasted just like I remembered it!!!!!
I had never cooked with pork belly so it was a positive new experience and will definitely try the authentic version you have in your recipe by leaving out the cabbage and bell pepper.
The spicy level was perfect for me. Thank you for such a great recipe!! Your recipes are so good!

Reallllyyyyy good recipe! Being indian I love love love spicy foods! This is my fav at the american chinese restaurant– I ask for spicy or w/ a side of chilly oil. But I accidentally added a bit more soy sauce so it was a bit too salty which the steamed jasmine rice helped soften thank goodness!! Over all just really really good!!

I have always loved Asian foods and prepare many recipes. However pork belly is a little hard for me to come by where I live and I would want to make twice cooked pork. My question is:

Can I substitute pork belly with pork tender loin and marinate it as I would for shredded pork and at least come close to the tenderness of the pork belly?
