Love congee, my mother many years ago made chicken giblet soup for my father (and us kids) that was pretty much a watered down congee. I’ve taken her recipe and thickened it up to porridge consistency. Simply chicken hearts, giblets, onion, mushroom and of course rice cooked in chicken stock. To spice it up I’ve sometimes added green curry paste. I think my mother may have picked the recipe up when we lived in Malaysia in the early 60s as it was eaten at breakfast. I eat it anytime but good during winter.

I haven’t tried this dish with brown rice, but I assume it works too. You’ll need to adjust the rice-to-water ratio and the cooking time, as it behaves quite differently from white rice.

That is to say, for every cup of rice, you would use 5 cups of water.”

while the recipe states to us 6 cups of water to 1 cup of rice.

In science, the rice:water ratio of 1:6 by volume would be 1 cup rice: 6 cups water.
