Thanks for the support Mike! As I mentioned in the recipe for Peking Duck, my easy homemade version doesn’t involve pumping which is a requirement in restaurant settings.
These duck pancakes can be used as spring roll wrappers provided they’re made extra thin (semi-transparent). Otherwise, they would taste too doughy.

I’m making Peking duck for tomorrow, and I’ve seen that in China they blow air in between the skin and the duck to separate the two…. I don’t have an air compressor and I’ve tried separating using my fingers- but with no success- is there an alternative way? Also- Can these Peking duck pancakes also be used as spring roll wrappers?

I’ve made these several times now and I have a couple of helpful notes to share.
-The recipe as written works if you’re nearing the dough without the assistance of the stand mixer. Be patient with the kneading and eventually you will achieve a smooth, supple dough.
-If you use a stand mixer you must adjust the ratio of flour to (much less) water. If you use the recipe as written the dough will be very wet and loose. I’ve done this and had to use more flour to get the dough to take shape and eventually over worked the dough.

Hi there,
I’ve made the pancakes a couple of times now, for whatever reason I get better results with 270 grams of water, at 260 grams the pancakes were thick and dry. Worth more water they were so soft and pliable. Thank you for this wonderful, easy delicious recipe!
