Hi Wei,
Thank you for your hard work and insights here. You have a lot of helpful tips.

Today, I tried out this crispy flat bread recipe and made half of the amount suggested.
My bread is not flaky inside or outside even though I feel I followed your recipe closely. The outer part is crispy but not flaky; the inside seems to be a bit too thick and again is not flaky, unlike yours.

Do you have any insights in how I can make it flaky? Appreciate your thoughts.
