I’ve lost count of the number of times I’ve made jars of this chili oil and gifted them to friends and family who have all appreciated this very fragrant and delicious oil which has elevated many a dish. Wei, you’d be pleased to know that my son has requested that I make 80 jars (of 200ml each) of this chili oil as gifts to his guests at his impending nuptials. I’ve made 25 jars thus far so have a few more rounds to go!

Hello Wei,
I made a batch of Chilli oil a couple of nights ago. This is SO much more than just Chilli oil! I made my own Chilli flakes with Facing Heaven and Guajillo Chillies and proceeded as per your recipe, Tsao-ok included.
It is excellent and I look forward to making it again, tweaking the heat level maybe.

Hi Jacqui! This recipe cannot be made with fresh chilies. However, I have two recipes that call for fresh chilies: Pickled Chili Garlic Sauce and Chiu Chow Chili Oil. Happy cooking!
