Today’s recipe, Baked Rice Cake with Dates, is a delightful alternative to Nian Gao (aka Chinese New Year Cake), a festive delicacy traditionally steamed. After perfecting this baked version through multiple trials, it has become a family favorite whenever we crave something sweet.

Recently, I brought this cake to a charity fund-raising bake sale in London, where it received many compliments for two standout qualities: its pleasingly gooey texture and its “not too sweet” taste. As I mentioned in my post on Almond Cookies, this is high praise for Chinese treats.

The cake’s sweetness partially comes from Chinese dates, which have a natural, honey-like sweetness with hints of caramel and a warm, fruity depth. For the London bake sale, I enhanced the recipe by blending Chinese dates with Medjool dates to reflect the event’s cross-cultural theme. The “Double-Date” flavor was a hit, and I must say, it added an irresistible twist!

Here is a list of ingredients you need for this recipe:

  • Glutinous rice flour. It’s ground, extra fine powder of glutinous rice (糯米, aka sticky rice or sweet rice), a popular ingredient commonly found in Chinese sweet treats, such as Tang Yuan, Snow Skin Mooncake, and more.
  • Coconut milk. It adds a pleasing fragrance. Regular milk can be used as a substitute.
  • Eggs
  • Neutral cooking oil, such as sunflower, canola, corn, and vegetable oil.
  • Sugar. Both white and brown sugar work well.
  • Baking powder
  • Dates. A mixture of Chinese dates (aka Jujube or red dates) and Medjool dates creates an outstandingly sweet and fragrant flavor. You can also use either one on its own.
  • Toasted sesame seeds (optional)

Note: See the recipe card at the end of the post for quantities.

Step 1: Make the batter

Begin by lightly beating eggs in a mixing bowl, then add coconut milk and cooking oil. Mix until all is well incorporated.

Add sugar, glutinous rice flour, and baking powder. Gently stir them into the wet mixture until a thick, smooth, and lump-free batter forms.

Step 2: Add the dates

Chinese dates and medjool dates chopped into pieces.

The next step is to cut the dates into small pieces. I like using scissors for this job, but a knife will work too. Discard all the pits.

Put the chopped dates into the mixing bowl. Stir well to evenly distribute the pieces.

Line a small baking pan with parchment paper, making sure to cover the sides as well. For shooting this recipe, I use a rectangle pan measuring 11” x 7” (28 cm x 18 cm). You may also use a square one measuring 9” x 9” (23 cm x 23 cm) or a round pan with a 10” (25 cm) diameter.

Pour in the batter and level it with a spatula. Sprinkle toasted sesame seeds all over the surface.

Step 3: Bake in the oven

Preheat the oven to 340°F (170°C), or 300°F (150°C) if it’s fan-assisted.

Place the pan on the middle rack of the oven and bake for about 25 minutes until the top turns slightly brown.

🌟 NOTE: Since ovens vary, check for doneness at 22 minutes by inserting a toothpick into the center. If it comes out clean, the cake is done; if not, bake for a few minutes longer.

Step 4: Cool and slice

Transfer the baked cake to a wire rack. Once it’s cool enough to touch, cut it into bars. They taste good both warm and at room temperature.

Store the leftover rice cake in airtight containers once they are completely cool. It’s fine to keep them on the counter for a day, away from heat sources and direct sunlight.

Otherwise, keep the container in the fridge for up to 5 days (they’re so delicious, I doubt they’ll last that long, though!). Bring the cake back to room temperature before serving, or warm it up in the microwave for 20 seconds at a time.

Ingredients

  • 2 large eggs

  • 2 cup glutinous rice flour
  • ½ tablespoon baking powder
  • 8 Chinese dates aka jujube, red dates (see note 1)
  • 3 Medjool dates
  • 1 tablespoon toasted sesame seeds optional

Instructions

  • Preheat the oven to 340°F (170°C), or 300°F (150°C) if it’s fan-assisted.
  • In a mixing bowl, lightly beat the eggs until the whites and yolks are well incorporated. Add coconut milk and cooking oil. Stir well to combine.
  • Put in sugar, glutinous rice flour, and baking powder. Mix until the mixture becomes thick, smooth, and lump-free.
  • Use a pair of scissors to cut Chinese dates and Medjool dates into small pieces and discard all the pits. Add the dates to the batter. Stir to ensure even distribution.
  • Use parchment paper to line a rectangle baking pan (11” x 7” / 28 cm x 18 cm), or a square/round pan with a similar volume (see note 2 for conversion), making sure to cover both the bottom and sides.
  • Pour the batter into the pan. Spread it with a spatula until it appears level. Sprinkle sesame seeds evenly over the surface.
  • Pop the baking pan into the preheated oven. Leave to bake for about 25 minutes until the top becomes lightly golden (see note 3).
  • Transfer the cake onto a rack to cool. Then, cut it into 10 bars and enjoy them warm or at room temperature.

1. You can also use either Chinese dates or Medjool dates on their own. If neither is available, other dried fruits (such as raisins or figs) or nuts (such as walnuts or pistachios) can be used as substitutes.

Learn the quick and simple method for making Chinese almond cookies, a delicious treat loved for their crumbly texture and nutty flavor.

I fell in love with Chinese almond cookies (Xìng Rén Sū/杏仁酥) the moment I took my first bite. They were small and rustic-looking, tightly packed in a plastic jar with a red lid. The fall-apart, crumbly texture and intense nutty flavor won my heart. And, they were ‘not too sweet’ (Bú Tài Tián/不太甜) — the highest compliment you can give to Asian-style pastries.

This delicious treat is often associated with culinary celebrations during Chinese New Year, particularly among American Chinese and Southeast Asian Chinese communities. While Nian Gao symbolizes ‘a better year ahead’ and Tang Yuan signifies ‘family reunion,’ almond cookies are said to resemble coins, bringing good fortune and prosperity.

  • The dough is easy to make and forgiving

Here is a list of ingredients you need for this recipe:

  • All-purpose flour, aka plain flour

  • Neutral cooking oil
  • Sugar & salt
  • Baking powder & baking soda
  • Almonds, ideally toasted
  • Egg yolk (skip it for vegan diet)

Optional: You can add a teaspoon of almond extract to enhance the nutty taste.

Substitutes

  • Almond flour, which refers to finely ground skinless almonds, can be replaced by almond meal which includes the skin and has a coarser texture.
  • Cooking oil can be substituted with melted, unsalted butter, but the final texture of the cookies will be different (less crumbly and more crunchy). Additionally, you may find that the taste of butter overpowers the almond flavor.

Step 1: Make the dough

The almond cookie dough is simple to make and quite forgiving. You can use a mixer, but making it by hand is just as easy.

First, mix all the dry ingredients (flour, sugar, salt, baking powder, and baking soda) in a bowl.

Then, pour the oil over the mixture and stir with a fork until many small lumps form and no dry bits remain.

Use your hands to gather all the lumps, then press and knead lightly to form a dough. Don’t worry if it cracks or falls apart easily — the goal is simply to achieve an even texture (It won’t feel like dough for dumplings or mooncakes).

However, if the dough feels overly dry and is difficult to shape into a cohesive mass, knead in a little more oil to adjust.

🌟 NOTE: If using melted butter instead of cooking oil, you’d need to slightly increase the quantity to achieve the desired texture.

Step 2: Shape the cookies

Once you’re satisfied with the consistency of the dough, divide it into small portions. You may eyeball the size and try to make them as similar as possible. If you are aiming for a uniform appearance, use a kitchen scale to measure. For reference, each of my dough balls weighs about ½ oz (15 g).

Gently shape a piece of dough into a ball. Hold it in your palm, then place an almond on top. Press it halfway into the dough. It’s perfectly fine if the edges of the dough crack a little.

Put the cookies on a baking sheet lined with parchment paper, leaving a little space in between each one (see note below). Finally, brush a layer of egg yolk, thinned with a little water, over the cookies. Skip this step if you wish to make them vegan.

🌟 NOTE: Cookies made with butter, instead of cooking oil, will spread more during baking. I suggest you leave 1 inch (2½ cm) of space between the cookies.

Step 3: Bake the cookies

To bake these cookies, you need to preheat the oven to 350ºF/180ºC, or 320ºF/160ºC if fan-assisted.

Place the baking sheet over the middle rack. Leave to cook for 18 to 20 minutes until lightly brown. Then, transfer the baked cookies to a wire rack to cool.

🌟 NOTE: Since the performance of each oven varies, I suggest you check the doneness at 15 minutes, then decide how much extra time is necessary.

I often make a big batch of almond cookies at a time. If you also plan to do so, here are some storage tips you may find helpful:

  • Wait until the cookies are completely cool.
  • Store them in air-tight containers so no moisture goes in.
  • Keep the containers in a dry, cool place away from direct sunlight.
  • Freezing: Use freezer-safe, air-tight containers. Place parchment paper in between each layer of the cookies. Consume within 3 months.
Q: Will this recipe work with other nuts?

A: Yes. Both peanuts and hazelnuts work well. You may need to slightly adjust the amount of oil when making the dough.

Q: Can I use lard instead of cooking oil?

A: Yes. Lard (rendered pork fat) is actually a common fat used in traditional Chinese pastries. It creates a crumblier texture and adds a richer aroma.

Make the dough

  • Add all-purpose flour, almond flour, sugar, baking powder, baking soda, and salt to a large bowl. Use a fork to mix them well.
  • Pour in the oil and mix with the fork until no dry flour remains.
  • Combine and press all the lumps together. It’s okay if the dough falls apart easily, as long as it has a uniform texture (see note 2).

Shape the cookies

  • With the aid of a kitchen scale, divide the dough into 40 portions, with each weighing about ½ oz (15 g).
  • With gentle pressure, shape a piece of dough into a ball. Place it on the palm of your hand. Press one almond halfway into the dough.
  • Repeat to make all the cookies, then put them on a baking sheet lined with parchment paper, leaving a little space in between.
  • Optional step: Mix egg yolk with ½ teaspoon of water. Brush it over the cookies.

Bake the cookies

  • Put the baking sheet on the middle rack of an oven preheated to 350ºF/180ºC, or 320ºF/160ºC if fan-assisted.
  • Bake for 18 to 20 minutes until the cookies brown nicely. Cool them completely on a wire rack before storing them in air-tight containers.

1. Almond flour can be replaced with almond meal, which includes the almond skin and usually has a coarser texture. In this case, the dough tends to be more crumbly, thus requiring gentler handling. 
2. Since the brand and accuracy of the measurement affect how the flour absorbs moisture, you may need to slightly adjust the amount of cooking oil. If the dough appears overly dry, add a little more oil.

What are sesame balls

Sesame balls, a beloved Chinese sweet treat, are known by various names in Chinese, including Jiān Duī/煎堆, Zhī Má Qíu/芝麻球, Má Tuán/麻团, and more. A Vietnamese delicacy that shares very similar characteristics is called Bánh Cam or Bánh Ran.

Essentially, they’re deep-fried dough made from glutinous rice flour, filled with a sweet filling (though sometimes left unstuffed), and coated with white sesame seeds. They are loved for their perfectly round shape, golden brown color, contrasting textures (crispy outside, chewy and creamy inside), and a sweet, aromatic, nutty taste.

You can find sesame balls at street stalls sold as breakfast or snacks in China as well as in dim sum restaurants. For many, they are also a must-have treat on Chinese New Year menus as they symbolize prosperity. This belief stems from the fact that their mochi-like dough expands magically, without the use of leavening agents, during the deep-frying process.

Top Tips

Before you scroll down to the recipe details, I encourage you to read the following tips first. They help you cook sesame balls safely and successfully. So do not skip!

  • You must follow the recipe precisely. Don’t attempt to wing it.
  • You must use just boiled water to make the dough to achieve a stretchy consistency that’s crucial for expanding.
  • Form balls of even size and seal the filling tightly leaving no weak point that might break during frying.
  • Control the oil temperature properly, using a kitchen thermometer, to prevent the balls from bursting.

Ingredients for the dough

To make the dough for sesame balls, you’ll need the following ingredients:

  • Glutinous rice flour
  • White sugar
  • Hot water (just boiled)
  • Neutral-flavored cooking oil

Glutinous rice flour (Nuò Mǐ Fěn/糯米粉), also known as sweet rice flour, is finely ground glutinous rice that has the same color and texture as cornstarch. Despite the term “glutinous”, it’s completely free from gluten.

It plays a key role in many classic Chinese desserts, such as Glutinous Rice Balls, Snow Skin Mooncakes, Chinese New Year Cake, etc. You can find it in most Chinese/Asian stores.

🛎 NOTE: Wheat flour, regular rice flour, or starch CAN NOT be used as substitutes since none of them creates the sticky, gooey texture that sesame balls are cherished for.

Filling options

Smooth, fine red bean paste

To stuff the sesame balls, you are free to choose your favorite fillings. The classic options include red bean paste (the one I used for shooting this recipe), black sesame paste (a popular filling for Tang Yuan), lotus seed paste (often found in Cantonese mooncakes), mung bean paste, peanut paste, etc.

If time permits, I encourage you to make your own fillings (click the links above for recipes). They have better taste, less sugar, and no additives/preservatives compared to the shop-bought versions.

Don’t have any filling? Don’t worry! The plain, unstuffed sesame balls are very tasty too. Learn how to adapt the recipe in the later section titled “Variations”.

🛎 TIP: The dough-to-filling ratio is about 2:1 in volume. That means the filling should be half the size of the dough. Overly stuffed sesame balls have thinner dough wrappers which have less strength to bear the expansion while deep-frying.

Prep & cook workflow

Step 1: Prepare the dough

In a mixing bowl, add ⅔ of the glutinous rice flour that you need for the recipe. Add sugar and mix well. Then pour hot water (just boiled) over the mixture. Stir vigorously with chopsticks until it becomes a thick, sticky paste.

Add the remaining ⅓ of the flour. Stir it into the paste with chopsticks, then combine and knead with your hand until a cohesive dough forms. Finally, add a little oil and knead again to achieve a smooth dough.

The dough should be soft, and stretchy, but not sticky. Unlike dumpling dough which is made of wheat flour, glutinous rice flour-based dough is much more forgiving so it’s easy to adjust its texture. Rub in more flour if the dough appears sticky, or fold in a little water if it seems too dry.

🛎 TIPS:

  • Make sure the water has just been boiled. Cold or warm water won’t give the dough the stretchability that it needs, therefore you’ll end up with a dough that crumbles easily.
  • You don’t need to rest the dough. As long as it has been well kneaded to a smooth look, you can use it straight away.
  • It’s fine to make the dough in advance. Wrap it tightly and store it in the fridge. Bring it back to room temperature before assembling and deep frying.

Step 2: Divide the dough & filling

Divide the dough and the filling of your choice into equal pieces. Use a kitchen scale for precision. This helps to ensure all the sesame balls are of very similar size thus they can be cooked uniformly.

With the palms of your hands, roll all the dough pieces and the filling into balls. If your filling is on the soft side, refrigerate it or freeze it for a short while to make it firmer.

🛎 TIP: Cover the dough balls with a piece of cling film in case they lose moisture during the next step of assembly. This is particularly important if your kitchen is hot and dry, or there is a draught coming through.

Step 3: Assemble the balls

The method of shaping sesame balls is the same as how you wrap Glutinous Rice Balls. Here is the procedure:

  1. Use your thumb to press the middle of a piece of dough, then pinch the rim to form a little bowl.
  2. Place a piece of filling inside the bowl. Gently push the edge of the dough upwards to wrap around the filling neatly and tightly.
  3. Seal the dough at the top, making sure there isn’t any leakage or weak point.
  4. Roll the assembled ball between your palms to achieve a roundish shape.

🛎 TIPS:

  • Take your time to shape each sesame ball with great attention to detail. Ideally, the dough should have a rather even thickness all around the filling. This helps to prevent leakage or bursting during the deep-frying process.
  • If you spot any particularly thin area, patch it up with a little dough using a dab of water to stick. Then gently smooth any joint.

Step 4: Coat with sesame seeds

Prepare two bowls for this step. Fill one with water mixed with a spoonful of glutinous rice flour and the other with sesame seeds (raw or lightly toasted).

Quickly dip one assembled ball in the water to wet it all around. Then use a spoon to transfer it to the sesame bowl.

Hold the bowl with both of your hands and shake it in a circular motion. This allows the ball to roll around and have itself entirely covered by the seeds.

Between your palms, roll and gently press the coated ball so that few seeds will fall off during deep frying.

Step 5: Deep fry the balls

Pour cooking oil into cookware of your choice for deep frying. It should be enough to submerge the sesame balls. I use a saucepan and fry the sesame balls in two batches. This way I don’t need to use too much oil.

The deep-frying process includes two stages:

Stage 1: Cook the dough at low temperature

Heat the oil over medium-low heat until it reaches 250°F/120°C. Gently slide in the balls one by one. Do not overcrowd so there is room for them to expand.

Initially, the balls sink to the bottom. Use a spoon to move them around to prevent sticking. Keep the heat low and fry them slowly.

Gradually, they’ll come up to the surface. Press them with a slotted spoon to keep them below the surface at all times. This helps to cook the dough evenly so that the balls expand in all directions uniformly.

Stage 2: Crisp the surface at higher temperature

Once the balls have expanded to about 1½ times their original size. Turn the heat up so it increases to about 320°F/160°C. Use this higher temperature to quickly crisp the outer layer of the dough so a strong crust develops which prevents the dough from tearing. Also, this ensures that the balls won’t collapse once cooled.

Once the sesame seeds gain a golden color, turn off the heat. With a slotted spoon, transfer the balls to a plate lined with a paper towel to absorb any excess oil.

🛎 TIPS:

  • The entire frying process usually takes me 8-10 minutes. The time required may vary depending on the heat power, cookware, the size of the balls, etc.
  • Observe closely to see if any ball starts to lose its perfectly round shape and bulges appear. This is a sign that a weak/thin point has developed and the dough may tear if frying continues. Remove the ball in question from the oil immediately.
  • If bursting does happen (Rest assured that it won’t happen if you follow the recipe tips attentively), remove the saucepan from the heat immediately and fish out the leaky ball and any filling that has escaped.

Store & reheat

Leave the freshly cooked sesame balls to sit for a few minutes before serving (mind that they’re very hot inside). They taste the best when warm. My children like them at room temperature too.

To store any leftovers, refrigerate them for up to 3 days, or keep them in the freezer for 3 months (inside an airtight container or bag).

To reheat, toast them in an oven preheated at 375°F/190°C for about 8 minutes (defrost first if frozen). Alternatively, reheat them in a preheated air fryer at 375°F/190°C for 3 minutes.

The stored and reheated sesame balls will lose their crispy exterior, but they still taste delicious (the sesame seeds remain crunchy).

Other variations

Sweet potato sesame balls are a tasty alternative. They look and taste wonderful, and are very easy to make.

Plain, unstuffed sesame balls are also quite common in China. After deep frying, the balls will become hollow in the middle. Some professional chefs can magically expand the dough to maximum and create a giant “sesame ballon”.

If making plain sesame balls, you may add more sugar to the dough to make them sweeter. In this case, adjust the volume of hot water accordingly.

Recipe FAQs

Q: Can I use the oven or air fryer to make sesame balls?

A: The oven isn’t suitable for this recipe. You could use an air fryer to cook them (spray a layer of oil over) but you won’t be able to achieve the perfectly round shape, crispy crust, or full expansion of the dough.

Q: Can I pan-fry them?

A: Yes, you can if you are not after the round ball look. Press the assembled balls into flat discs, then pan-fry them with a thin layer of oil until both sides become golden.

Q: Can I use black sesame seeds for this recipe?

A: Absolutely! Sometimes, I use a mixture of white and black sesame seeds. They create a beautiful look.

Q: Are sesame balls gluten-free and/or vegan?

A: They are gluten-free and can be made vegan by using vegan fillings. You can adapt my recipes for red bean paste and black sesame paste by replacing butter with coconut oil.

Q: Can I freeze uncooked sesame balls and fry them later?

A: Theoretically, you can defrost uncooked sesame balls and fry them once they return to room temperature. However, uncooked dough has the potential to crack when frozen, so I don’t recommend doing so.

Sesame Balls (Jian Dui/煎堆)

Ingredients

For the dough 

  • 2 cup glutinous rice flour divided
  • ¼ cup white sugar
  • cup hot water just boiled
  • 1 teaspoon neutral cooking oil

For the filling

You also need

  • 1 tablespoon glutinous rice flour
  • cup sesame seeds raw or lightly toasted
  • Neutral cooking oil for deep frying (see note 2)

Instructions

Make the dough

  • Put about two thirds of the glutinous rice flour into a mixing bowl. Add sugar and mix well. Pour hot water over and mix with chopsticks until a sticky mass forms.
  • Add the remaining one third of glutinous rice flour in two batches. Mix with chopsticks, then combine with your hand to form a soft dough that doesn’t stick easily to your hands (see note 3).
  • Finally, add oil and knead it into the dough. It will become smoother and completely sticky-free.

Shape the balls

  • Roll the dough into a rope then cut it into 12 equal parts. Shape each piece into a ball.
  • Divide red bean paste (or the filling of your choice), into 12 equal portions (about 1 tablespoon each). Roll them into balls as well.
  • Shape a dough ball into a bowl shape. Place a piece of filling in the middle. Gently push the dough upwards to wrap around the filling tightly. Seal completely at the top, making sure there isn’t any leakage.

Coat the balls

  • In a small bowl, mix 1 tablespoon of glutinous rice flour with about ½ cup (120ml) of water. Put sesame seeds into another bowl.
  • Briefly roll an assembled ball in the flour-water mixture to wet it all over. Then transfer it to the sesame bowl. Move the bowl in a circular motion so that the ball rolls and gets covered by the seeds.
  • Gently press the ball all around to make sure all the seeds stick to the dough securely.

Fry the balls

  • Pour oil, enough to fully submerge the sesame balls, into a saucepan/wok for deep-frying. Heat it until it reaches 250°F/120°C.
  • Gently slide in the balls. Do not overcrowd them as they will expand. Fry in batches if necessary. Use medium-low heat to fry. Move the balls around with a spoon to prevent sticking.
  • Once they start floating on the surface, gently press them down with a slotted spoon so that they are submerged in the oil all the time.
  • When the balls expand about 1½ times bigger than their original size, turn the heat up to high so it reaches about 320°F/160°C. Continue frying the balls, while pressing them down, for a short period until the sesame seeds become golden (see note 4).
  • Transfer the balls out to a plate lined with a paper towel to absorb any excess oil. Let them sit for a few minutes before serving.

Store & reheat

  • You can keep leftovers, inside airtight bags/containers, in the fridge for up to 3 days, or in the freezer for 3 months.
  • Reheat them in a preheated oven at 375°F/190°C for about 8 minutes (defrost first if frozen), or in an air fryer preheated at 375°F/190°C for 3 minutes.

1. Considering different fillings weigh differently, the metric measurement provided is just for reference. The generous rule for the dough-to-filling ratio is about 2:1 in VOLUME.
2. Choose cooking oil that’s suitable for deep-frying, such as canola oil, peanut oil, vegetable oil, sunflower oil, corn oil, soybean oil, etc.
3. The flour-water ratio may vary slightly depending on the brand of the flour and room humidity. Please feel free to adjust by adding more flour or water when necessary to achieve the desired consistency.
4. Tips on deep-frying:
  • The process takes me 8-10 minutes. It may vary depending on your heat power, cookware, and the size of the balls.

What are red bean popsicles

Today’s recipe, Red Bean Popsicles, is a nostalgic and sentimental one for me. I grew up eating them on most summer days, but only recently, I started making them at home for myself and my children. I’m excited to share my tried and tested recipe with you!

Essentially, red bean popsicles (Hong Dou Bing Gun/红豆冰棍) are frozen treats made by blending cooked red beans with thickened milk and sweetening them with condensed milk (or sugar, honey). They’re appreciated for their distinct nutty, earthy, and creamy flavor which is perfectly balanced with a moderate level of sweetness.

Red bean based food has an important place in Chinese culinary traditions. Think Red Bean Soup and Red Bean Paste that’s used as a filling in many treats, such as Red Bean Buns, Tang Yuan, Mooncakes, Zongzi, etc. If you enjoy the above dishes, this red bean popsicle recipe is definitely worth trying!

Ingredients & ratios

You’ll need four ingredients to make red bean popsicles:

  • Red beans, raw or canned (more information found in the next section)
  • Whole milk (full-fat milk). Replace it with single cream for a richer taste, or semi-skimmed milk if you wish to reduce calorie intake.
  • Cornstarch, or glutinous rice flour. It’s for thickening the milk so the popsicles taste less icy. Also, it helps to evenly distribute the bean bits (otherwise, they tend to sink to the bottom of the molds).
  • Condensed milk. You could use sugar (white or brown) or honey to sweeten the popsicles but I find condensed milk to be the most flavorful choice. A mixture of evaporated milk and sugar would make a better substitute.

Ratios

My recipe is for making 8 popsicles (see detailed ingredient measurements in the recipe card at the end of the post). If you wish to alter the quantity, here are the ratios to follow:

  • Milk to beans: Use an equal volume of milk and cooked beans. For example, use 1½ cups of milk for 1½ cups of cooked beans.
  • Starch to milk: Use 1 part of starch for 8 parts of milk. For example, use 3 tablespoons of starch for 1½ cups (=24 tablespoons) of milk.
  • Condensed milk: The best way to figure out its optimal quantity is to taste the mixture often and adjust as needed.

About red beans

Red beans (Hong Dou/红豆) are also known as adzuki beans (spelling variations include azuki, aduki). They’re small, round (or slightly oblong), dark-red colored beans popular in Chinese (and East Asian) cuisine.

If available, use ready-to-eat, canned red beans as this dramatically reduces the preparation time. You can find them in Chinese/Asian stores, as well as whole food/healthy food retailers. Some mainstream supermarkets have them too.
Otherwise, use raw red beans. Soak and cook them before mixing with other ingredients.

🛎 Note: Some canned red beans sold in Chinese/Asian shops are already sweetened (labeled as Mi Hong Dou/蜜红豆). You’ll need to reduce or omit condensed milk in this case.

Equipment

Here is the equipment you need for this recipe:

  • A blender or food processor. If you don’t have one, use a potato masher (or a flat-bottomed jar) to crush the beans.
  • Popsicle molds. Any type would work but I find the silicone ones are a better option as it seems easier to remove popsicles from them.

Instructions

Step 1: Cook the beans (skip this step if using canned ones)

Soak raw red beans in plenty of water overnight. Drain and rinse well under running water.

Put the beans into a pot and add plenty of water (twice the volume of the beans). Bring it to a boil, then cover with a lid and leave to simmer over low heat for 60-90 minutes until they become soft. To speed up the process, use a stovetop pressure cooker or an Instant Pot. Cook for 25 minutes on high pressure and release the pressure naturally.

Drain off the cooking liquid and keep the cooked beans for later use.

🛎 Tip: Raw beans expand about 3 times in volume once cooked. That is to say, if you need 1½ cup of cooked beans, ½ cup of raw beans are enough. Keep leftover cooked beans for 3 days in the fridge or 2 months in the freezer.

Step 2: Simmer the milk

Begin with mixing cornstarch with a few spoons of milk until no more lumps can be seen. Pour the mixture and the rest of the milk into a saucepan.

Cook over medium heat. Once you see tiny bubbles appear around the rim, turn the heat down to low. Stir with a spatula constantly while the milk thickens.
When its consistency becomes similar to that of runny yogurt, remove the saucepan from the heat.

Step 3: Blend the mixture

Put cooked beans and the thickened milk into a blender/food processor. Add condensed milk (leave some out for later to adjust the taste). Run the machine at high speed to blend.

Usually, I stop blending when the beans are partially broken. So you’ll be able to taste the bits when eating the popsicles. However, please feel free to blend further to achieve a very smooth consistency (both versions exist in China but the former is more traditional).

Don’t forget to taste the mixture and add more condensed milk if it isn’t sweet enough. Bear in mind that it would taste a little less sweet once frozen. So at this stage, you may wish to make it slightly sweeter than your preferred taste.

Step 4: Fill the molds

Use a spoon or a spouted jug to pour the mixture into your popsicle molds. Remember not to fill it right up to the rim as the mixture will expand a little once frozen (If you have any leftover mixture, store it in the fridge for up to three days).

Slide in the popsicle sticks and pop the molds into the freezer. Depending on the performance of your freezer and the quantity of the popsicles, it will take 4 to 8 hours to freeze them completely.

To unmold the popsicles, hold the molds upside down and run warm water over them for 10-15 seconds. Alternatively, leave the molds on the kitchen counter for about 5-10 minutes depending on the room temperature.

Alternative flavors

Want to try homemade popsicles with other flavors? You can easily adapt this recipe using a variety of ingredients.

  • Make them with mung beans. In China, mung bean popsicles (Lü Dou Bing Gun/绿豆冰棍) are just as popular as these red bean ones. Follow the same instructions to soak and cook the beans from scratch (I haven’t seen canned ones). The bean-to-milk ratio remains the same.
  • Make them with fruits. This recipe also works when replacing beans with fruits, fresh or frozen. Our favorite options include mango, strawberry, kiwi fruit, blueberry, etc. You’d need less condensed milk as fruits contain natural sugar.

  • Run the machine to blend and break the beans. Stop a few times to check the consistency. You can either keep the beans in bits (as shown in my recipe images) or break them into a very smooth texture.
  • Taste the mixture and add more condensed milk as needed. Keep in mind that it will taste less sweet once frozen.
  • With a spoon or a spouted jug, transfer the mixture into your popsicle molds (store any leftovers in the fridge for up to 3 days). Leave a little space to the rim as the mixture will expand slightly after freezing. Put in the sticks. Store the molds in the freezer for 4-8 hours.
  • To unmold the popsicles, hold the molds upside down and run warm water over them for 10-15 seconds. Or, leave the molds on the counter for 5-10 minutes before pulling out the popsicles.

Notes

1. Use semi-skimmed milk if you wish to consume fewer calories. Or, replace whole milk with single cream for an even richer taste. 
2. You can either use ready-to-use canned red beans or cook raw red beans from scratch. Find instructions in the post above or read my post on Red Bean Paste
3. If unavailable, condensed milk can be replaced by sugar, honey, or evaporated milk with added sugar.

What is Tang Yuan

Tang Yuan/汤圆, also known as Yuan Xiao/元宵 or Chinese glutinous rice balls, is a round, stuffed Chinese dessert made of glutinous rice flour and a sweet, semi-runny filling.

It’s always served warm in a plain or sweetened liquid. The outer layer has a soft, gooey texture that resembles that of mochi but it also delivers a silky mouthfeel that tastes quite unique. The filling, such as black sesame paste, red bean paste, peanut filling, etc, stands out for its aromatic flavor and lava-like consistency.

Unlike many other classic Chinese desserts, such as Mooncakes or Zongzi (Sticky rice dumplings), which are tied to particular occasions, Tang Yuan is associated with several traditional festivals: Winter Solstice Festival (Dong Zhi/冬至), Chinese New Year (Spring Festival/春节) and the Lantern Festival (Yuan Xiao Jie/元宵节).

Apart from these special occasions, Tang Yuan is enjoyed all year round in our Red House. We absolutely adore its aromatic flavor and gooey texture. Also, it’s so convenient to freeze a big batch and cook it whenever we fancy a bowlful.

It’s also a great dessert to serve at dinner parties where you could have guests with different dietary requirements. It’s gluten-free and vegetarian/vegan-friendly.

Top Tips

Here are a few helpful tips before I explain ‌how to make Tang Yuan from scratch.

  • Prepare the filling first as it needs to be chilled before assembly.
  • Adjust the dough consistency freely when necessary.
  • Use natural ingredients to color the dough for a fun look.
  • Make a big batch then freeze them for later use. 

How to make the filling

Typically, Tang Yuan is filled with sweet, paste-like fillings. But savory fillings also exist. Ready-made sweet fillings are available in Chinese stores but I often find them overly sweet. This Tang Yuan recipe introduces homemade black sesame filling which, I’d say, is the most popular option.

Black sesame paste

To make black sesame filling for Tang Yuan, you’d need three basic ingredients:

  • Black sesame seeds. White sesame seeds would work too if you aren’t after the “authentic” look.
  • Sugar, white or brown
  • A type of fat that helps to create a lava consistency as well as to add a rich flavor. It can be butter, coconut oil (for a vegan diet), or lard (the traditional choice)

It takes three simple steps to prepare the filling:

  1. Toast raw black sesame seeds in a dry pan. Stir constantly and observe attentively. When the flat seeds plump up and become very easy to break when crushed with your fingers, they’re done. Do not overcook to avoid a burning taste (Skip this step if your shop-bought seeds have already been toasted).
  2. Grind the toasted seeds and sugar in a food processor, blender or spice grinder. Run the machine on full power with several intervals (to avoid overheating) until a fine, soft, oily paste appears.
  3. Stir in the fat content of your choice (butter, coconut oil or lard) and mix well. Refrigerate it for a while to firm up for easy assembly (in the freezer if it’s very soft).

Other filling options

Looking for more filling ideas? Other choices include red bean paste, peanut filling, five-nut filling, etc.

Take the peanut filling for example. A shortcut version is to add sugar to peanut butter (the thick, chunky version works best) then mix well. Freeze for a short while to firm up before assembly. 

How to make the dough

It’s super easy to make the dough for Tang Yuan. Glutinous rice flour and water are all that you need. 

Also known as sweet rice flour, glutinous rice flour is finely milled glutinous rice (Nuo Mi/糯米). It has the same color and texture as cornstarch and it’s the key ingredient for many Chinese sweet treats, such as Sesame Balls, Nian Gao (Chinese New Year Rice Cake), Baked Rice Cake, and more.

Compared to Chinese dumpling dough, Tang Yuan dough takes much less time to make as there is no resting required. Also, it’s much more forgiving so you can easily adjust its consistency.

  1. Add glutinous rice flour to a mixing bowl. Firstly, pour in boiling water while stirring with a spatula.
  2. Then gradually add room temperature water.
  3. Combine and knead by hand until a soft, smooth dough forms. 

🛎 Troubleshoot: The dough consistency

The finished dough should be quite soft and pliable but not at all sticky. Please feel free to adjust its texture by adding more water if too hard or adding more flour if sticky. You can make these adjustments at any stage of the dough preparation. 

How to color the dough

If you want to give classic white Tang Yuan a makeover, use some natural ingredients to make them colorful (Like how I make colorful dumplings). Here are some options:

  • Make a pink dough by replacing part of the water with beetroot juice (that’s what I did when shooting this recipe).
  • Use matcha powder or spinach juice to make the dough green.
  • Carrot juice would give the dough an orange tint.

How to assemble

Assembling Tang Yuan isn’t as complicated as it may seem. This type of dough is much more forgiving than wheat flour-based dough and there isn’t any fancy pleating needed (you’ll find it easier than folding dumplings).

Before assembly, divide both the dough and the filling into equal portions. Then roll each piece into a ball shape.

Use your fingers to flatten a piece of dough into a disc a little larger than the diameter of the filling ball. Place a portion of the filling in the middle.

Gently push the dough upwards to tightly wrap around the filling. Then seal it completely.

🛎 Troubleshoot: Cracked dough

Since Tang Yuan dough doesn’t stretch much, you might find it easy to crack while assembling if your dough is a little too dry. Don’t panic if this happens. Simply wet the broken part with a tiny layer of water, then gently rub with your finger to reseal.

🛎 Notes:

  • Remember to cover the dough balls with cling film or a damp towel to keep the moisture in if your kitchen is warm and dry.
  • If your filling is on the soft side, put the divided balls in the fridge (or the freezer) for a short while. This will make wrapping a lot easier.

How to cook

Bring plenty of water to a full boil in a saucepan/pot. Gently add the assembled Tang Yuan. Push them around with the back of a spoon to avoid sticking to the bottom.

Leave to boil over medium-high heat. Once all the balls float up to the surface, cook for 1 more minute. Then fish them out and put into individual serving bowls.

Depending on the region of China, Tang Yuan can be served in many different ways. The simplest way (what my family does) is to add a little cooking liquid to the bowl. This helps to keep the Tang Yuan warm for longer thus the filling stays runny.

Ginger syrup is a very popular serving liquid for Tang Yuan. If this is the version you’re looking for, follow these steps to make it:

  1. In a separate saucepan, simmer a small piece of smashed ginger and sugar (white, brown or rock sugar) in water for 3 minutes or so.
  2. Taste then adjust the flavor. Add more water if it’s too gingery or sweet. Cook a little longer if the ginger taste is too mild. Add more sugar if it isn’t sweet enough (But you wouldn’t want the serving liquid too sweet as the Tang Yuan is quite sweet on its own).

In other parts of China, another popular way to serve Tang Yuan is to add thick syrup made of dark brown sugar and then sprinkle toasted soybean powder over. This is my favorite version when I have those ingredients at hand.

I’ve also tried serving Tang Yuan in the juice of Pear with Rock Sugar (冰糖雪梨). It was very tasty and nourishing.

Make ahead & store

Like Chinese dumplings and bao buns, Tang Yuna is a great food to have in your freezer.

Make a big batch: You can double or triple the recipe by increasing the ingredient quantity proportionally. Just remember to cover unused dough very well to avoid drying out since it’ll take longer to assemble a big batch.

Store in the freezer: Immediately after the balls have been assembled, lay them in a single layer on a tray. Keep in the freezer until completely frozen. Then transfer them to an airtight container/bag and store in the freezer for up to 2 months.

Cook frozen Tang Yuan: Cook them the usual way without defrosting. After adding them to the boiling water, it will take a longer time for the water to come back to a boil. So cover the pot with a lid to speed up the process. Once the balls float up, uncover and cook for one more minute.

Recipe FAQs

Q: Can I replace glutinous rice flour with regular flour or cornstarch?

A: No. This recipe has to be made with glutinous rice flour. You can find it in Chinese/Asian stores and some online shopping platforms.

Q: Why did my filling leak out after cooking?

A: Here are some common causes: The filling wasn’t securely sealed by the dough leaving small cracks on the surface; the dough wasn’t even in thickness so the very thin, weak part broke as the filling expands when heated; they have been overcooked.

Q: Can I store Tang Yuan in the fridge for a few hours before cooking?

A: Yes, it’s fine to keep uncooked ones in the fridge for less than a day. You need to cover the balls very well to prevent them from drying out.

Q: My dough is too dense making wrapping difficult. How to fix it?

A: The flour-water ratio varies slightly depending on the brand of the flour and the humidity. If you find the dough too dense, simply add more water little by little then knead again until you get the desired texture.

Q: Can I use Nutella as a filling?

A: Why not! Since Nutella has a rather runny consistency, you’d need to firm it up for easy shaping. For example, add some coconut flakes and mix well. Then chill in the fridge for a while.

Ingredients

For the filling

  • cup black sesame seeds
  • tablespoon sugar or to taste
  • tablespoon softened butter or coconut oil, lard

For the dough

  • 1 cup glutinous rice flour
  • 3 tablespoon boiling water
  • 4 tablespoon room temperature water or beetroot juice

Instructions

Prepare the filling

  • Toast black sesame seeds in a dry frying pan over low heat until they plump up and become very easy to break when crushed with your fingers (see note 1).
  • Once completely cool, put the toasted black sesame seeds in a food processor. Grind them with sugar until they turn into a soft, shiny paste.
  • Add butter (or coconut oil/lard). Mix to combine then keep refrigerated until the mixture is firm enough to handle.
  • Divide the paste into 20 portions. Shape each piece into a ball. Put them back in the fridge while preparing the dough (see note 2).

Make the dough

  • In a mixing bowl, pour boiling water into glutinous rice flour while stirring with a spatula. Then add room temperature water (or beetroot juice for a pink dough) little by little.
  • Knead with your hand until a smooth, soft dough forms. Adjust its consistency by adding more water or flour (see note 3). If you are not using the dough straightaway, wrap it with cling film to avoid drying out.
  • Divide the dough into 20 equal pieces then roll each into a ball.

Assemble Tang Yuan (please refer to the video below)

  • Flatten a piece of dough into a round wrapper with your fingers.
  • Place a ball of filling in the middle. Gently push the wrapper upwards to wrap the filling tightly. Seal at the top completely (see note 4).

Cook Tang Yuan

  • Bring a large pot of water to a full boil. Gently slide in some Tang Yuan. If necessary, cook in batches as the balls expand while cooking so do not crowd the pot.
  • Push the balls around with the back of a spoon to prevent them from sticking to the bottom of the pot. Cook over medium-high heat. Once all the balls start to float on the surface, boil for a further minute.
  • Dish out (along with some cooking liquid) and serve warm. You may also make some ginger syrup separately as the serving liquid (see note 4).

Store Tang Yuan

  • Freeze Tang Yuan right after they are assembled. Lay them in a single layer on a tray lined with parchment paper to freeze. Once totally frozen, put them in an air-tight bag and store in the freezer.
  • To cook frozen Tang Yuan, follow the same cooking procedure (do not defrost).

Notes

1. Do not overly toast the seeds as it would lead to an unpleasant burnt flavor.
2. To make assembling easier, the filling should be quite firm. So you may put the filling balls in the freezer for a short while if they appear too soft.
3. The amount of water (or beetroot juice) required varies depending on the brand of the flour. Adjust if necessary. The finished dough needs to be smooth and very soft but not at all sticky.
4. The dough made of glutinous rice flour isn’t as elastic as regular dough. It may crack during the assembling (especially if it’s not soft enough). If that happens, wet the broken part with a little water then rub gently to reseal.
5. Make ginger syrup: In a separate saucepan, simmer a small piece of smashed ginger and sugar in water for 3 minutes or so. Taste then adjust the flavor. Pour into the bowls with cooked Tang Yuan.

What is red bean soup

From red bean paste used as a filling in many classic treats (Red Bean Buns, Mooncakes, Tang Yuan, to name a few), to the popular summer delight Red Bean Popsicles, and to today’s recipe Sweet Red Bean Soup, Chinese people’s love for red beans is obvious.

Sweet red bean soup belongs to the family of Tong Sui/糖水 (meaning sugar water literally), a dessert category for sweet treats in soup form that are popular in Cantonese food, a regional cuisine of China.

Essentially, it’s dried adzuki beans (commonly known as red beans, Hóng Dòu/红豆) cooked and mashed into a creamy soup with a nice bite of soft beans. It has an earthy, nutty, mildly sweet taste with a hint of citrusy flavor.

The Chinese names for this dessert soup include Hóng Dòu Tāng/红豆汤, Hóng Dòu Gēng/红豆羹 and Hóng Dòu Shā/红豆沙. The last name is commonly used in Hong Kong and it may cause confusion with red bean paste which shares the same name in other parts of China.

Lovely both warm and cold, it can be enjoyed at the end of a meal, or as a snack at any time of the day. It takes some time to cook it but the process is very simple and straightforward.

Top tips

Here are some helpful tips before we dive deep into the recipe details:

  • Freeze the soaked beans to reduce cooking time.
  • Control the blending to achieve your preferred consistency.
  • Add optional ingredients to improve texture.
  • Make a big batch and freeze it for later use.

Ingredients & substitutes

Here are all you need to make sweet red bean soup:

  • Adzuki beans, aka red beans
  • Fresh orange zest, or dried tangerine peels
  • Dark brown sugar (or other sweeteners), plus a little salt
  • Optional add-on: small tapioca pearls (sago)

Adzuki beans

Adzuki beans can be found in dried food sections of Chinese/Asian supermarkets. They need to be rehydrated before cooking. I sometimes also use canned ones that are already cooked. They’re a very handy alternative.

The bean-to-water ratio

If cooking on the stove, I suggest you use 1 part of dried beans with 5 parts of water (in volume). If using an instant pot (or a stovetop pressure cooker), reduce the water to 4 parts as there won’t be much evaporation.

Fresh orange zest

Traditionally, dried tangerine peels (Chén Pí/陈皮) are used to give red bean soup a hint of citrusy aroma. They are an ingredient often paired with spices for stew dishes.

If you don’t have them in the pantry, grate some orange zest to substitute. This method is more accessible, and the taste isn’t compromised.

Dark brown sugar

Rock sugar (Bīng Táng/冰糖) is traditionally called for in classic Chinese desserts (think Pear & Rock Sugar). I prefer dark brown sugar for today’s recipe for its caramel taste on top of the sweetness.

Other options include white sugar, light brown sugar, or liquid sweeteners, such as honey, golden syrup, etc. I’ve also tried sweetened condensed milk which adds a rich milky taste. You’ll also need a pinch of salt which helps to bring out the sweetness effectively.

Optional add-ons

The ingredients above are sufficient for making the basic version of red bean soup. If you’d like to go the extra mile, consider adding one more ingredient to make it even more appealing.

Popular add-ons include small tapioca pearls (sago, Xī Mǐ/西米), glutinous rice balls (without filling), lotus seeds, coconut milk, etc. My recipe uses tapioca pearls which have a bouncy, slippery texture once cooked. They help the soup to develop a creamier, smoother mouthfeel.

Cooking procedure

Step 1: Soak the beans

This process helps to reduce cooking time. Make sure you use plenty of water as the beans will swell up. Leave them to soak overnight or for at least 4 hours.

🛎 A speedy trick: Like the fast method I use for cooking congee, you may freeze rehydrated beans (drain off the water). The water inside the beans will expand while freezing forcing the beans to break. This will help shorten the cooking time required in the next step.

Step 2: Cook the beans

Drain off the soaking water then put the beans and orange zest in a pot/large sauce. Add clean water, about 5 times the volume of the dried beans. Bring to a full boil then turn the heat down to the lowest. Cover with a lid and let simmer for 1½ hours.

The cooked beans are still in their original shape but when pressed between fingertips, they should be mashed very easily.

🛎 Instant pot method: Alternatively, use an instant pot (or a stovetop pressure cooker) to cook the beans in water which is 4 times the volume of dried beans. It takes 25 minutes on high pressure. Allow the pressure to release naturally.

Step 3: Blend the beans

This step breaks the beans. I use an immersion blender for convenience. It can also be done by transferring the beans and the cooking liquid to a regular blender.

Do not be tempted to overly blend. Stop the machine a couple of times to check the consistency. What you’re looking for is a creamy, runny paste with a small amount of broken red beans remaining. This is the optimal texture for me as I enjoy a nice bite of the beans instead of having a completely smooth purée.

That said, please feel free to alter the texture based on your own preferences.

Step 4 (optional): Cook tapioca pearls

Add tapioca pearls and some hot water (same volume of the dried beans) to the blended soup. Cook over very low heat for about 12 minutes until the pearls turn completely transparent.

🛎 Note: Be attentive during this step. Stir the soup from time to time and scrape off anything that sticks to the bottom of the pot. Add more water if necessary as the pearls absorb quite a bit of liquid. Otherwise, you might burn part of the soup as it becomes thicker and thicker.

Step 5: Sweeten

Now you can turn off the heat and stir in dark brown sugar and a pinch of salt. Add it gradually and taste it several times to adjust. My version has a very mild sweetness. Increase the quantity if you like it sweeter.

How to serve

Sweet red bean soup tastes great both warm and at room temperature. I’d have it right after cooking on cold winter days or chill it before eating when the weather is warm.

As the soup cools, its consistency will become thicker. To thin it, simply add a little hot water and mix well.

Make ahead

I always make a big batch of sweet red bean soup and freeze it in portions. Whenever we crave it, I simply defrost the amount I need in the fridge, then reheat it to serve.

Stored in airtight containers, it can be kept in the fridge for up to 4 days or in the freezer for up to 3 months.

  • Put the rehydrated beans and orange zest into a pot/saucepan. Add water (5 times the volume of the dried beans).
  • Bring to a full boil then turn the heat to the lowest. Cover with a lid and leave to simmer for 1½ hours (for 1 hour if the beans have been frozen) until the beans can be easily mashed with fingertips.
  • *Alternatively, use an instant pot (or a stove-top pressure cooker) to speed up the process. Cook for 25 mins on high pressure. Then leave to release the pressure naturally.

Blend

  • Use an immersion blender or a regular blender to emulsify the beans and the cooking liquid. Stop when most of the beans turn into a runny paste while the rest remains lumpy.

*Optional step

  • Add tapioca pearls to the soup. Pour in 1 more cup (240ml) of hot water as the pearls will absorb quite a bit of liquid while cooking.
  • Leave to simmer over the lowest heat for about 12 minutes until the pearls become transparent. During this process, remember to stir from time to time and add more water if necessary to prevent burning at the bottom of the pot.

Sweeten

  • Gradually add brown sugar, along with a pinch of salt, to the soup. Taste to adjust the sweetness. Serve immediately, or leave to cool and enjoy at room temperature.

Store

  • Keep leftover red bean soup in an airtight container. Store in the fridge for up to 4 days or 3 months in the freezer.

Reheat

  • Reheat cold/defrosted red bean soup over low heat until piping hot. You may need to add a little water to thin it if it appears to be very thick.

Notes

1. You can use canned, ready-to-eat adzuki beans. In this case, heat the beans, along with the liquid in the can, to a boiling point. Then blend and follow other steps to finish (add some water if necessary).
2. If using dried tangerine peels. soak them in water until they become soft. Then mince them finely.
3. To sweeten the soup, here are alternative choices: white sugar, light brown sugar, rock sugar, honey, syrup, sweetened condensed milk, etc. Taste and adjust the quantity.

What is black sesame paste

Like red bean paste, black sesame paste (Hēi Zhī Má Xiàn/黑芝麻馅) is used as a filling in many classic Chinese desserts & sweet snacks. Other Asian cuisines, such as Japanese and Korean, also treasure this delicious ingredient.

It’s made of unhulled black sesame seeds, a sugary ingredient, and optional fat. Firstly, the seeds are toasted to bring out their best aroma, then ground to a glossy, thick paste before being combined with other ingredients.

Black sesame paste has a distinctively nutty, aromatic and earthy flavor. It also has a bitter taste which is balanced with sweeteners like honey or sugar. When used in different recipes, its consistency varies. It can be reasonably firm, or runny and smooth like melted chocolate.

Don’t confuse it with the regular sesame paste (Zhī Má Jiàng/芝麻酱) which is primarily used as a condiment in Chinese savory dishes, such as Dan Dan Noodles, Hot Dry Noodles, etc. The latter is made of toasted regular sesame seeds (beige-colored). It’s unsweetened and has a very thick consistency.

Pro tips

Firstly, I’d like to offer a few tips before explaining the recipe in detail.

  • Skip the toasting step if you can find ready-toasted seeds.
  • Take breaks while grinding to avoid overheating the machine.
  • How you sweeten affects the consistency of the paste.

Ingredients

Black sesame paste only calls for two basic ingredients, black sesame seeds and a sugary ingredient of your choice. Optionally, you may add some fat if you’d like it richer. Learn more information on each below.

Black sesame seeds

Widely used in Asian cuisine, black sesame seeds are easily accessible in Chinese, Japanese, Korean, or general Asian stores.

There are two types available: raw black sesame seeds and toasted black sesame seeds. The latter is handy since you can blend them straight away. I like raw ones too as I find their nutty flavor is more distinctive when freshly toasted.

The sugary ingredient

To sweeten black sesame paste, you’re free to choose whatever sugary ingredient you prefer. The choices include:

  • Solid: white sugar (granulated sugar, caster sugar, etc.), brown sugar (light brown, dark brown, muscovado, etc.),
  • Liquid: Honey, golden syrup, maple syrup, brown rice syrup, etc.
  • Artificial sweeteners if you wish to avoid the above.

Through tests, I found out that liquid sweeteners like honey and syrup help black sesame paste to gain a firmer consistency. So use them if that’s the texture you’re looking for.

The optional fat content

Adding fat to black sesame paste is optional. However, consider doing so if you’d like to have the following benefits:

  • It enriches the paste and adds an extra aroma.
  • It makes a soft paste a little firmer after chilling. So it becomes easier to handle while stuffing a wrapper.
  • It creates a lava-like, runny consistency when used in food that’s served warm.

Butter or coconut oil for a vegan diet are good choices as they solidify once chilled. You may also use lard, the fat traditionally used in Chinese black sesame paste and other sweet fillings. Liquid oil is not recommended for this recipe.

Equipment

Although a traditional set of mortar and pestle would work, I’d recommend you use a food processor, a blender, or a spice grinder to make a black sesame paste of the best texture and consistency (and it’s much less laborious).

How to make it

It takes three simple steps to make black sesame paste from scratch: toast, grind and flavor.

Step 1: Toast the seeds

Toasting black sesame seeds in a pan.

Put raw black sesame seeds in a clean, dry pan. Toast them over medium-low heat to fully bring out their nutty aroma (skip this step if using ready-toasted seeds).

🛎 TIPS:

  • Stir the seeds with a spatula while toasting. This helps to heat them evenly and avoid burning.
  • To judge the doneness: The seeds need to be removed from the heat once they become plump (raw ones are flat) and can be crushed easily with your fingertips. Don’t overcook. Otherwise, you’ll get a burnt taste.

Step 2: Grind the seeds

Add the toasted seeds to your food processor, blender or spice grinder. Grind them in full power at intervals every 5-10 seconds. Scrape off any paste sticking to the side then keep grinding.

The seeds will first appear sandy and grainy. Then they will start releasing their natural oil and become sticky. You can stop once they gain a fine, shiny, soft texture (see image above for reference).

🛎 TIPS:

  • No matter what size your machine is, you need to add sufficient seeds to work with (enough to fully cover the blades).
  • It takes quite a while to get the paste to the desired texture. Make sure you give your machine a few breaks, as some can not endure extended periods of running and become overheated if working for too long.

Step 3: Flavor the paste

Transfer the paste to a bowl. Add the sugary ingredient of your choice. Use a spatula to stir and fold the paste until fully combined.

As I mentioned earlier, different sweeteners change the paste texture differently. The two portions of paste shown in the image below have different firmness.

  • The left one is sweetened with white sugar which makes the paste softer so it spreads out on the surface.
  • The right one is sweetened with honey which makes the paste firmer and holds its shape well.

There isn’t a set ratio when sweetening the paste. I usually add the honey/sugar gradually and taste until it reaches my preferred sweetness.

🛎 Optionally, add some butter or coconut oil (softened at room temperature) to enrich the paste. Chill it in the fridge before using it as a filling.

Ways to use it

Here are some classic recipes that use black sesame paste as a filling. I also give suggestions on how soft or firm the paste should be for each dish.

Tang Yuan (aka glutinous rice ball), a sweet treat that’s always served warm. It can be enjoyed all year round but it’s particularly popular on Chinese New Year and Winter Solstice. Black sesame paste is one of its most loved fillings. I’d recommend you add a little fat to the paste for this recipe.

Mooncakes, a very special dish for celebrating the Chinese Mid-Autumn Festival. Black sesame paste can be used both in traditional baked mooncakes and in no-bake snow skin mooncakes. A firmer paste sweetened with honey or syrup is preferable for this dessert. It makes molding manageable and the cakes keep their shape well.

Steamed stuffed buns. You can use my recipe for Custard Buns or Red Bean Buns and replace the filling with black sesame paste. The fat-enriched paste is a good choice as it will flow out of a warm bun when torn open.

Q: Can I use regular white sesame seeds for this recipe?

A: Although they’re not a traditional choice, you can surely use them as a substitute. The taste difference is almost unnoticeable.

Q: My paste isn’t as runny as I expected. How to improve?

A: To make a very soft black sesame paste, make sure 1). Grind the seeds long enough until they release most of their natural oil; 2). Use sugar, instead of honey or syrup, to sweeten it; 3) Add butter or coconut oil to the paste.

Q: My paste is too soft. It’s impossible to wrap it.

A: Here are two tips to make it firmer: 1). Use honey or syrup, instead of sugar, to sweeten the paste; 2). Before assembly, chill it in the fridge until firm, or keep it in the freezer for a short while.

Black Sesame Paste (黑芝麻馅)

A popular filling for sweet treats, black sesame paste can be made with just two simple ingredients. Variations are included.

Ingredients

  • 1 cup black sesame seeds raw or toasted
  • tablespoon honey or white/brown sugar (see note 1)
  • 2 tablespoon butter or coconut oil (OPTIONAL, see note 2)

Instructions

Toast (skip if using ready-toasted seeds)

  • In a clean, dry pan, toast black sesame seeds over low heat. Move them around with a spatula constantly to heat evenly.
  • When the seeds become plump and can be crushed easily between fingertips, remove them from the heat (It took me about 6 minutes).

Grind

  • Transfer the toasted seeds to a food processor, a blender, or a spice grinder. Run the machine in full power to grind them. Take breaks periodically to avoid overheating the machine. Also, use a flexible spatula to scrape off any seeds sticking to the side.
  • Once the seeds release their natural oil and become a semi-solid, smooth paste, transfer it to a bowl.

Flavor

  • Use honey if you prefer a firm paste that holds its shape easily. Pour it over the paste, then fold with a spatula to combine thoroughly.
  • Use white or brown sugar if you prefer a runnier paste. Add it little by little. Taste and adjust its quantity as needed.
  • Optionally, add softened butter (or coconut oil) to the paste to enrich its flavor and increase its fluidity in hot food (see note 2).

Store

  • Store the paste in a sterilized, airtight container. Keep it in the fridge for a month or in the freezer for 6 months.

Notes

1. Apart from honey and sugar, you may also use golden syrup, maple syrup, brown rice syrup, etc. to sweeten the paste. 
2. If you plan to use black sesame paste as a filling for hot food, I recommend you consider adding butter or coconut oil. This helps to create a lava-like consistency when served warm.

Nothing can beat the taste of homemade mooncakes. This recipe shows you how to make traditional mooncakes with easy steps and many pro tips. A video is also included.

It’s true that all Chinese festivals are associated with one or more particular types of food. To welcome the upcoming Mid-Autumn Festival/中秋节 (This year it falls on Tuesday, Sept 17th), I’m sharing a recipe for traditional Cantonese-style mooncakes filled with salted egg yolks and lotus seed paste (蛋黄莲蓉月饼).

A Cantonese Classic

Mooncakes are a traditional delicacy dedicated to the Mid-Autumn Festival which falls on the 15th day of the 9th month of the year based on the lunar calendar.

Essentially, they are stuffed sweet pasties shaped into a full-moon shape with delicate patterns on top. Beautiful in appearance and tasty on the palate, they are indispensable at family reunions on this special occasion and also a popular gift.

Among many varieties of Chinese mooncakes, Cantonese-style mooncakes are no doubt the most popular. They are baked pastries consisting of a rich, sweet filling and a thin, moist, golden brown crust. 

The filling I use for this mooncake recipe, salted egg yolk with lotus seed paste, is one of the most loved combinations. Two ingredients create a harmonious contrast: aromatic, creamy, and sweet with a hint of saltiness. 

Compared to the no-bake Snow Skin Mooncakes that I shared previously, this Cantonese mooncake recipe involves more time and effort. But the result is definitely rewarding!

Top tips

Before we go into the detailed instructions, let me first give you a few tips for success:

  • Rest the dough for a while to avoid tearing.
  • Use shop-bought lotus seed paste (or other fillings) to speed up the process.
  • Be attentive while baking. Adjust the time if necessary.
  • Make sure to keep the egg wash thin to achieve a clear pattern.
  • These mooncakes need to be rested before serving.
  • Watching the tutorial video helps a lot.

Ingredients

For the dough

  • Golden syrup
  • Lye water
  • Neutral cooking oil
  • All-purpose flour (plain flour)

Golden syrup

Cantonese mooncakes call for inverted sugar syrup/转化糖浆, an indispensable ingredient for achieving the desired texture of the mooncake crust: moist, soft and shiny. It also helps to extend the shelf life of mooncakes.

Golden syrup is a type of inverted sugar syrup. It’s accessible in most supermarkets, so it’s a good choice for this recipe.

Don’t attempt to replace syrup with regular sugar. Honey isn’t a good substitute either as it results in a dough that tears easily.

Lye water

Essential to Cantonese mooncakes, lye water (Kansui/枧水) is a food-grade potassium carbonate solution used to raise the PH of the dough (neutralize the acid in the syrup). Also, it helps the dough to gain an appetizing brown color and a fluffy, tender texture.

Cooking oil

Use any oil that has a neutral flavor, such as canola, sunflower, peanut, rapeseed, soybean, corn, vegetable oil, etc. Olive oil is not recommended.

For the lotus seed paste

  • Dried lotus seed
  • Sugar
  • Neutral cooking oil

Alternative pastes

Making lotus paste from scratch takes some time. Please feel free to use the ready-to-use version available in Chinese stores.

Other popular fillings, such as red bean paste, black sesame paste, etc., can be used as substitutes.

Salted egg yolks

I use ready-to-use salted duck egg yolks which often come in airtight plastic bags. They’re available in the chilled or frozen sections in Chinese stores.

Alternatively, use raw salted duck eggs and cook the yolks yourself. Here are two methods:

  • Boiling method: Start cooking the eggs in cold water. Once boiling, turn the heat down and leave to simmer for 6 minutes. Rinse under cold water then remove the shell and egg whites.
  • Baking method: Take the hardened yolks out of the raw salted eggs. Wash off the membrane around them. Bake them in the preheated oven at 375°F/190°C until small bubbles appear around the bottom of the yolks (it takes about 8 minutes).

You’ll also need an egg yolk for the egg wash and a little cornstarch for dusting when shaping the mooncakes.

Equipment

To make traditional baked mooncakes, you’d need the following equipment:

  • A mooncake mold for making small 50g ones
  • A kitchen scale to measure the dough and filling for each cake
  • A pastry brush for coating the cakes with the egg wash
  • A baking sheet lined with parchment paper

About mooncake molds

I use modern-style plastic mooncake molds which come with springy handles and different pattern plates. They’re neater and easier to use than the traditional wooden ones. You can find them in some Chinese stores or online shopping platforms such as eBay, Amazon, etc.

Cook the lotus paste

Homemade lotus seed paste has two advantages: There are no additives or preservatives; You can adjust its sweetness to your liking. Here is how you make it:

  • Soak: Soak dried lotus seeds in water overnight to reduce the cooking time.
  • Cook: Simmer them in water for 30 to 40 minutes until they become soft, then drain off the water.
  • Blend: Put the cooked seeds into a food processor and blend them into a fine paste. Add a little water if you find it difficult to blend.
  • Fry: Transfer the paste to a non-stick pan. Cook over medium heat. During this process, add sugar and oil in two batches. Make sure to constantly stir and fold the paste. This helps to evenly evaporate the moisture and avoid burning. 
  • Cool: Once the paste becomes quite dry and easily foldable into a solid block, remove it from the heat. Leave to cool completely.

🛎 NOTE: Make sure the cooked paste isn’t too wet as it would make assembly very challenging. It also causes excess steam during baking, thus affecting the look of the mooncakes.

  • First, mix golden syrup, lye water, and oil until well combined. Add flour to the mixture and knead briefly to form a dough. It should be soft, smooth but not sticky.
  • Cover the dough with plastic wrap and rest for 30 minutes. This helps to relax the gluten making it more elastic. Otherwise, you may find it easy to tear or crack.

🛎 NOTE: Be aware that you may need to adjust the quantity of the flour depending on the thickness of your syrup and the liquid absorption capacity of your flour.

The dough filling ratio

Once you have all the parts ready, you will need to measure and divide the dough and filling into small portions. 

The dough filling ratio varies depending on personal preferences. It can be 2:8, 3:7, or 4:6. I always enjoy the taste of the dough so my recipe goes for the 4:6 ratio. That means for a 50g mooncake, the dough weighs 20g and the total weight of the lotus paste and egg yolk should be 30g (you can increase it to 35g).

Also, this ratio makes it easier to assemble. You’ll have enough dough to securely seal the filling thus avoiding leaking.

How to shape them

Once you have all the parts measured, follow these steps to shape the mooncakes (watch the video in the recipe card below):

  • Shape a portion of lotus seed paste into a round wrapper. Put a salted egg yolk in the middle. Gently push the paste upwards to seal the yolk completely.
  • Flatten a piece of dough into a wrapper. Use the same method to tightly wrap and seal the filling.

  • Coat the assembled ball with a thin layer of cornstarch. Put it into a mooncake mold.
  • With the opening facing down, place the mold over a baking sheet. Press the handle to shape the cake. Then lift the mold and press again to release the cake.

🛎 NOTE: If your mooncake mold makes 100g mooncakes, double the dough and filling quantity for each cake. Also, you may use two salted yolks to make it extra luxurious.

Bake the mooncakes

  • Preheat the oven to 375°F /190°C. Bake them for 5 minutes to harden the top of the mooncakes so the egg wash won’t ruit the delicate pattern.
  • Take them out and brush a layer of the egg wash. Put them back into the oven. Reduce the heat to 320°F/160°C and bake for a further 5 minutes. Then brush another layer of egg wash.
  • The last baking process takes another 10-15 minutes. I suggest you check at 10 minutes. They are done once evenly golden brown.

Rest the mooncakes

Let the mooncakes cool on a mesh rack. After that, you’ll find them quite dry to touch. Don’t rush to eat them. It’s essential to rest them further.

Store them in airtight containers for 1 to 2 days. During this period, mooncakes become softer and gain a nice shiny appearance. Chineses call this process “Huí Yóu/回油”, meaning “the return of oil”.

Leftover mooncakes can be stored in the fridge for up to 2 weeks. Bring back to room temperature before serving.

FAQs

Q: Can I use honey to replace syrup?

A: I don’t recommend honey as a substitute. Through testing, I found the dough made with honey tears very easily.

Q: My mooncake skin has a bitter taste. Why?

A: I suspect that you’ve added too much lye water. Make sure you strictly follow the suggested quantity as even a slight overdose would result in a bitter taste.

Q: When molding, the corner of my mooncakes had splits and cracks. How to improve?

A: Here are two possible causes: 1. The filling isn’t wrapped tightly by the dough so there is some air trapped inside. 2. The dough isn’t evenly distributed over the filling so some parts would tear when pressing.

Q: For the resting period, shall I leave the mooncakes on the counter or in the fridge?

A: You can keep them in airtight containers on the counter away from direct sunlight unless your kitchen is very warm.

Equipment

  • Mooncake mold for making small 1.8oz/50g ones
  • Kitchen scale
  • Pastry brush
  • Baking sheet

Ingredients

For the paste (see note 1 for substitutes)

  • 100 g dried lotus seeds
  • 75 g sugar or to taste
  • 50 g neutral cooking oil such as sunflower, canola, vegetable, peanut, rapeseed oil, etc.

For the dough

  • 150 g golden syrup
  • ½ teaspoon lye water aka Kansui (see note 2)
  • 50 g neutral cooking oil such as sunflower, canola, vegetable, peanut, rapeseed oil, etc.
  • 220 g all-purpose flour aka plain flour (see note 3)

You also need

  • 20 salted egg yolks ready-to-use ones (see note 4)
  • Cornstarch for dusting
  • 1 egg yolk for brushing

Instructions

Cook the paste (skip if using shop-bought one)

  • Soak dried lotus seeds in water overnight. Drain well and remove the green bit in the center (if any). 
  • Cook the seeds in simmering water (enough to cover) until soft (about 30-40 minutes). Drain then puree them in a food processor (add a little water if necessary). 
  • Transfer the puree into a non-stick pan. Cook over medium heat. Add sugar and oil in batches. Stir and flip constantly. Once the paste becomes dry and holds in shape, remove from the heat to cool (see note 3 & 4).

Prepare the dough

  • Mix golden syrup, oil and lye water until well incorporated. Add flour. Combine and knead briefly to form a soft dough (see note 5). 
  • Cover with plastic wrap and rest for 30 minutes.

Assemble

  • Put one salted egg yolk and some lotus seed paste on the scale. Adjust the filling to reach 30g.
  • Flatten the paste into a round wrapper. Place the egg yolk in the middle. Gently push the paste upwards to seal the yolk completely. 
  • Flatten 20g of the dough into a wrapper. Use the same method to tightly wrap around the filling and make a ball (Please refer to the video below).

Shape

  • Coat the ball with a thin layer of cornstarch. Put it into a mooncake mold. 
  • Over a baking tray lined with parchment paper, place the mold with the opening facing down. Gently press the handle to shape the cake. Lift the mold and press again to release the cake.

Bake

  • Preheat the oven to 375°F/190°C. Bake the cakes for 5 minutes. While waiting, mix the egg yolk with 1 teaspoon of water for brushing later. 
  • When the time is up, reduce the oven temperature to 320°F/160°C. Take out the mooncakes and brush their top with a thin layer of the egg wash (see note 5).
  • Put them back into the oven and bake for a further 5 minutes. Take out and coat them with another layer of egg wash. Then continue to bake for 10-15 minutes until evenly brown.

Rest & store

  • Transfer the baked mooncakes to a cooling rack. Once completely cooled, store them in an airtight container for 1-2 days before consumption. They are ready to be served once soft to touch and appear shiny. 
  • You may keep them in the fridge for up to 2 weeks. Bring back to room temperature before serving.

1. You may use ready-to-use lotus seed paste from Chinese shops. Alternatively, replace it with homemade or shop-bought red bean paste, black sesame paste, etc.
2. If lye water is unavailable, check out my post on how to make homemade lye water using baking powder.
3. The amount of flour needed may vary depending on the thickness of the syrup and the absorbent nature of the flour. Adjust accordingly.
4. Alternatively, use raw salted duck eggs. See instructions in the post above to learn how to prepare them.
5. Don’t coat the patterned surface with too much egg wash. Before brushing, remove excess liquid by pressing the brush on the rim of the bowl.

No-bake snow skin mooncakes are a simple, tasty alternative to traditional mooncakes. They consist of a tender, slightly chewy skin and a creamy custard filling. Follow my detailed instructions to make some!

According to the Chinese lunar calendar, Mid-Autumn Festival (Zhōng Qiū Jié/中秋节) is on the 15th day of the 8th month of the year which is a full moon day (It falls on Tuesday, September 17th in 2024). Apart from the tradition of moon gazing, eating mooncakes is an absolute must for Chinese around the world.

As its name suggests, mooncake (Yuè Bǐng, 月饼) is a cake that resembles the shape of the moon. Comprising a crust and a filling, they are made with different tastes and appearances using various methods across China.

Every year, I make two types to celebrate this special occasion. One is the traditional Cantonese mooncakes with salted egg yolk. The other is the modern snow skin mooncakes which are much simpler to make.

What is snow skin mooncake

Known as Bīng Pí Yuè Bǐng/冰皮 in Chinese, snow skin mooncake is believed to have originated in Hong Kong (although some argue that it’s from Singapore). It has become increasingly popular in Chinese bakeries, as well as in family kitchens, thanks to its diverse appearance and simple cooking procedure.

The original version of snow skin mooncake has a white, chewy, mochi-like outer layer and is served cold. That’s how it got the name “snow skin”. Nowadays, you can find colorful ones which are even more attractive.

They can be stuffed with regular mooncake fillings, such as red bean paste, lotus paste, black sesame paste, etc. The custard filling that I’m introducing today is the most popular type I’d say.

Key features

Compared to traditional mooncakes, here are a few features of snow skin mooncakes:

  • No baking is involved
  • They’re less tricky to make thus novice-friendly
  • They can be easily colored with natural ingredients
  • You can improvise with the filling, e.g. try ice cream!

Recipe summary

Before I discuss more detailed instructions and tips, here is a summary of how to make snow skin mooncake with custard filling:

  1. Heat all the ingredients for the filling in a pan until they turn into a paste. Refrigerate to firm up.
  2. Mix all the ingredients for the skin into a batter. Steam (or microwave) to harden. Then knead briefly into a dough.
  3. Divide the dough and the filling into equal pieces. Wrap the filling with the dough to form a ball. Use a mooncake mold to shape. Then you’re ready to serve! 

Equipment required

Apart from regular kitchen tools like pans, bowls, plates, spatula, etc, you’ll need the following:

Mooncake molds

Plastic moulds for making Cantonese mooncakes

I prefer the modern plastic mooncake molds which have springy handles. They’re easy and neat to use. Also, each mold comes with several plates with different patterns. The traditional wooden ones would work too if you already have one.

You can find mooncake molds in some Chinese stores, especially around Mid-Autumn Festival time. They’re also available on major online shopping platforms, such as Amazon, eBay, etc.

Kitchen gloves

The mooncake skin tends to stick to your hands. So a pair of food-grade gloves would help a lot.

Make the custard filling

Custard filling (奶黄馅) is very popular in Chinese sweet treats (think dim sum style Steamed Custard Buns). Its creamy, soft texture pairs perfectly with this type of mooncake skin.

Ingredients for the filling

Here are what you’ll need to make custard filling:

  • Wheat starch, or cornstarch/tapioca starch
  • Powdered sugar (aka icing sugar)
  • Condensed milk (or milk powder)
  • Unsalted butter, melted
  • Eggs

Cooking steps

  1. Mix all the ingredients above until they’re fully incorporated. Pour the mixture into a saucepan.
  2. Cook it over low heat. The mixture will start solidifying at the bottom of the pan. Keep stirring and folding with a flexible spatula to avoid burning.
  3. Once it turns into a solid mass, transfer it to a bowl. Put cling film tightly over the cooked filling. Once completely cool, refrigerate it for 2 hours to firm up further.

🛎 Pro tips:

  • Remember to keep the heat very low. Do not boil. Otherwise, the filling will become lumpy.
  • Do not overcook. The filling should hold in shape but not too dry (It’ll become harder once chilled). For the desired consistency, please refer to the video in the recipe card below.

Other filling options

Many common sweet fillings for Chinese treats can go into snow skin mooncakes. I’ve written a post on how to make red bean paste. Prepare the skin

The outer part of snow skin mooncakes has a chewy, sticky and springy mouthfeel which I find very pleasant. It’s similar to the texture of mochi but a bit firmer, as it needs to be pressed to a particular shape and pattern.

Ingredients for the skin

You’ll need the following to make the dough:

  • Glutinous rice flour (糯米粉)
  • Regular rice flour (粘米粉)
  • Wheat starch (澄粉), or cornstarch/tapioca starch
  • Powdered sugar (aka icing sugar )
  • Milk (full-fat or semi-skimmed)
  • Condensed milk
  • Neutral cooking oil (e.g. canola, vegetable, rapeseed, sunflower, etc.)

A trip to a Chinese store would be necessary to purchase glutinous rice flour, regular rice flour and wheat starch. Condensed milk adds a rich flavor to the skin and it’s widely available in mainstream supermarkets.

🛎 Pro tips:

  • Don’t omit regular rice flour: Some recipes suggest that you use only glutinous rice flour. I don’t suggest you skip regular rice flour. As I explained in my post on Sichuan Leaf-wrapped Rice Cakes,  it helps the dough to stay in shape and to avoid it being overly sticky.
  • For a gluten-free diet: use cornstarch or tapioca starch instead of wheat starch which usually contains a very small amount of gluten (Unless your wheat starch is clearly labeled as gluten-free). They produce almost an identical result.

Cooking steps

1. In a mixing bowl, whisk all the ingredients for the skin until well combined. Pour the mixture into a deep plate.

2. To cook it, you have two options. Both work well. After cooking, the batter should turn completely solid (The time required may vary a little depending on your device. Adjust if necessary).

  • OPTION 1: Microwave – Cover with a plate to avoid splashing. Cook on high power for 4 minutes.
  • OPTION 2: Steam – Cover with a plate to avoid dripping water. Steam over medium-high heat for 20 mins.

3. With a flexible spatula, scrape the hardened dough off the plate. Transfer it to another plate to cool quickly.

4. Once no longer hot to touch, combine and knead it with gloved hands until it becomes smooth and elastic.

🛎 Pro tips:

  • Knead the dough very well. This helps to reduce stickiness.
  • Cover the kneaded dough tightly with cling film. To make assembly easier, chill it in the fridge for 1 hour.
  • If you double the quantity of the recipe, microwave the mixture in two batches. If steaming, increase the time to 30 minutes.

Shape the mooncakes

Before assembly, make sure the dough and the filling have been chilled so they are reasonably firm to touch. This way, they are much easier to handle.

To prevent the mooncakes from sticking to the mold, you also need a little dusting flour. You can make it by toasting some glutinous rice flour over low heat for about 4 minutes. Leave to cool for later use.

To assemble the mooncakes, follow these steps:

1. Divide the dough and filling into equal pieces (a kitchen scale helps). Roll each into a ball.

2. Flatten a piece of dough into a disc. Place a piece of filling in the middle.

3. Gently push the wrapper upwards to tightly cover the entire filling. Seal well on the top.

4. Roll the assembled ball in the toasted glutinous rice flour to gain a thin coating.

5. Put it into a mooncake mold. Place the mold on a flat, lightly dusted surface. Press the springy handle to shape the mooncake.

6. Lift the mold up. Press the handle again to push the mooncake onto the surface.

🛎 Pro tips:

  • Remember to wear gloves to avoid sticking.
  • If your mooncakes don’t come off the mold easily, lightly dust the mold beforehand.
  • If using a traditional mold, dust it well then put the ball in. Press to flatten. Tilt the mold while tapping it gently until the mooncake falls off.

Make them colorful

When possible, I like coloring my food with natural ingredients (I did so in my recipe for Colorful Dumplings, Mango Pancakes, and Glutinous Rice Balls). If you wish to make your mooncakes colorful, follow these tips:

  • Natural ingredients work well, such as matcha powder or spinach powder for green; purple sweet potato powder for purple; beetroot juice for pink, etc.
  • Simply sprinkle the powder or juice over the cooked dough, then knead well to distribute the color until it becomes even.
  • Add the coloring powder/juice little by little until the desired color shade appears.
  • You can also mix two or three different pieces of dough to create a marble effect.

Serve & store

Right after assembling, your mooncakes are ready to be served! Enjoy them as an afternoon snack or a dinner treat. 

If you plan to eat them later, here is how you store them:

  • In the fridge: Place them in air-tight containers and consume within 72 hours. Make sure you add a layer of parchment paper between each layer if you have to stack them up.
  • In the freezer: Freeze them as soon as they’re assembled in air-tight containers/plastic bags for up to 1 month. Leave to thaw in the fridge.

How to rescue hardened mooncakes?

The outer layer of snow skin mooncakes tends to harden over time. If they’re made just a day ago, simply bring them back to room temperature.

If they’ve been stored for longer, use one of the following methods to soften them up:

  • Microwave method: Wet them with a very thin layer of water then put in a microwave-safe plate/bowl. Cover with cling film or a plate. Microwave on high power for 15 seconds. Check the softness and cook 10 more seconds at a time until they have your preferred softness. You may need to flip the mooncakes once if you find one side stays hard.
  • Steamer method: Steam the mooncakes for 2 minutes. Check the softness. Cook a little longer if needed. They’ll become quite sticky on the surface right after steaming. Leave to cool for a while then serve.

Recipe FAQs

Q: Can I use wheat flour to replace rice flour?

A: No, it won’t work for this recipe.

Q: I want to make a big batch (more than double the recipe). Can I steam the batter for the skin all at once?

A: If you have a multi-layer steamer, you can add the batter into several plates and steam just once. This way it will be cooked through. Otherwise, cook it in bigger plates in several batches and extend the time if necessary (The idea is to spread out the batter as shallow as possible).

Q: After cooking, I see some oil separated from the dough. Shall I discard it?

A: It’s perfectly normal to see that. But make sure you keep the oil and knead it into the dough. This will keep the skin stay tender for longer.

Q: The dough is very sticky. How to improve?

A: If you’ve used the ingredients and ratio suggested in the recipe, highly likely this is because the batter hasn’t been cooked through. Every microwave (or cooker if steaming) performs differently. Slightly extend the time in your case.

Q: Will this recipe work if I use ice cream as the filling?

A: It will work. Make sure you use hard serve ice cream which takes longer to melt (avoid slow churned ice cream or sorbet). Also, act fast when assembling.

Snow skin mooncake with custard filling (冰皮月饼)

Equipment

  • Mooncake molds for making small 1.8oz/50g ones
  • Food-safe gloves

Ingredients

For the filling

  • tablespoon wheat starch or cornstarch/tapioca starch (see note 1)
  • 3 tablespoon powdered sugar aka icing sugar
  • 3 tablespoon unsalted butter melted
  • 2 tablespoon condensed milk See note 2 for substitute
  • 2 large eggs

For the skin

  • 3 tablespoon glutinous rice flour
  • 3 tablespoon regular rice flour
  • 2 tablespoon wheat starch or cornstarch/tapioca starch
  • 3 tablespoon powdered sugar aka icing sugar
  • ½ cup milk
  • 1 tablespoon condensed milk
  • 1 tablespoon neutral cooking oil
  • Matcha powder for coloring (optional)

For dusting

  • 2 tablespoon glutinous rice flour

Instructions

Make the filling

  • Mix wheat starch (or cornstarch/tapioca starch), powdered sugar, melted butter and condensed milk until well combined. Add the eggs. Lightly beat until fully incorporated.
  • Pour the mixture into a saucepan. Cook over low heat. Once the mixture starts to solidify at the bottom of the pan, stir and fold constantly with a flexible spatula.
  • When the mixture becomes evenly solid, transfer it to a bowl. It should hold in shape but not too dry (please refer to the video below for the desired consistency).
  • Lay a piece of cling film tightly over the cooked filling. Leave to cool completely then put into the fridge to firm up further.

Prepare the skin

  • While waiting for the filling to cool, prepare the skin. Put glutinous rice flour, regular rice flour, wheat starch (or cornstarch/tapioca starch) and powdered sugar into a bowl. Pour in milk. Mix until smooth. Add condensed milk and oil. Stir to combine.
  • Pour the mixture into a deep plate, then cover it with another plate. Cook it using one of these methods: [Option 1] In a microwave for 4 minutes on high power; [Option 2] In a steamer for 20 minutes over medium-high heat (see note 3).
  • By then the mixture should have turned solid. Use a flexible spatula to scrape it off and transfer to another plate to speed up cooling (see note 4).
  • When it’s cool enough to touch, combine and knead it in your hands until it becomes smooth (you’ll need to wear food-safe gloves to prevent sticking). Wrap it with cling film if not used immediately.

Color the skin (optional)

  • Sprinkle matcha powder or purple sweet potato powder over the cooked dough. Knead to distribute the powder until the color becomes even. For the entire dough this recipe makes, you’d need about ½ teaspoon of powder.

Toast the dusting flour

  • In a pan, toast glutinous rice flour over low heat for about 4 minutes. Transfer out to cool for later use.

Shape the mooncakes

  • Take the filling out and knead in your hands briefly to make it smoother. Divide it into 8 equal pieces and roll each into a ball.
  • Also, shape the skin into 8 equal balls. Flatten one piece into a round wrapper. Place a filling ball in the middle. Gently push the wrapper upwards to tightly cover the filling. Seal at the top.
  • Roll the assembled ball in the toasted glutinous rice flour. Rub off any excess flour leaving just a very thin layer.
  • Put the ball into a mooncake mold. Place the mold, with the opening facing down, onto a lightly dusted surface. Press the springy handle then lift up the mold. Push the handle again to release the mooncake (see note 5).

Store

  • In the fridge: Store them in air-tight containers in the fridge and consume within 72 hours.
  • In the freezer: Lay them in a single layer to freeze. Once completely frozen, transfer them into air-tight containers/bags. Store in the freezer for up to 1 month.

Serve

  • They’re best when consumed right after assembly. The skin will harden over time.
  • To soften, you can [Option 1]: Lightly wet them and microwave them in a plate/bowl covered with cling film. Run on high power for 15 seconds. Check the softness and cook longer (10 seconds at a time) until softened. [Option 2]: Steam them for 2 minutes. Check the softness. Cook a little longer as needed.

Notes

1. Please be aware that regular wheat starch contains a very small amount of gluten. To make this treat gluten-free, use cornstarch/tapioca starch or special wheat starch that’s clearly labeled as gluten-free.
2. You can replace 2 tablespoons (45g) of condensed milk with ¼ cup (40g) of full-fat milk powder (this ingredient was included in the previous version of my recipe).
3. If you’re to double the quantity of the recipe, microwave the skin mixture in two batches. If steaming, increase the cooking time to 30 minutes.
4. It’s perfectly normal to see some oil separated from the dough after cooking. Remember to knead it into the dough.
5. Dust the mooncake mold before shaping if your mooncakes don’t slide off easily.

What is Nian Gao?

Nian Gao (年糕), also called “Nin Go” in Cantonese, is known worldwide as Chinese New Year Rice Cake. Traditionally, it comprises key ingredients like glutinous rice flour, regular rice flour, and brown sugar. They are mixed together and steamed to form a round, sticky and gooey cake with a caramel-like sweetness.

The term Nian/年 literally translates as “year” while Gao/糕 refers to “cake” which shares the same pronunciation with the character which means “tall” or “high.” So this sweet treat is a must-have Chinese New Year delicacy for many families as eating it on this special occasion symbolises prosperity and a better year ahead.

Nowadays, Nian Gao comes in different varieties depending on the region or family preference. Some variations involve red bean paste, taro, purple yam, dates, and nuts. However, regardless of where they are made and how they are flavoured, the key ingredients remain the same.

Why this recipe

A whole Chinese New Year cake

I’ve had my share of New Year rice cake, but the version I’m sharing today is one of the best I have ever tasted. Aside from the base ingredients, it includes finely chopped Chinese dates (aka Jujube or red dates) and walnuts. The dates add a sweet flavour with a hint of tart, while the walnuts add pops of nuttiness and crunch in each bite.

Another thing I like about this recipe is that it doesn’t require lengthy steaming time (some other methods need 1-2 hours). This is because it involves using hot sugar liquid to partially cook the flour mixture and form a soft dough. It veers away from the traditional way of making a runny batter.

Ingredients

Here is what you need for this recipe:

  • Glutinous rice flour (Nuo Mi Fen/糯米粉). The most important ingredient of Nian Gao, it’s made of finely ground glutinous rice (aka sweet white rice). It’s characterised by its sticky, stretchy nature once cooked, thus the name. This type of flour is actually gluten-free, despite its confusing name.
  • Regular rice flour (Nian Mi Fen/粘米粉). It‘s made of milled regular rice, the type we usually steam and eat with savoury dishes.
  • Dark brown sugar. You can also use muscovado sugar or Chinese brown rock sugar known as Bing Pian Tang (冰片糖).
  • Chinese dates. They are the fruits of the Jujube shrub, also known as red dates or Chinese jujube. This recipe calls for dried ones which can be found in Chinese stores. They have a sweet, slightly tart taste and chewy texture.
  • Walnuts. You can also use peanuts or other nuts of your choice.
  • Ginger. It gives a zesty and peppery undertone to the Nian Gao.
  • Oil. I like coconut oil as its subtle aroma pairs very well with other ingredients in this recipe. If unavailable, replace it with other neutral-tasting cooking oil.

🛎 TIP: The recommended ratio of glutinous rice flour and regular rice flour is about 5 to 1. Please feel free to increase the latter if you prefer your Nian Gao with a firmer, less sticky texture.

Equipment required

  • A heatproof container. I use a springform cake tin to make Nian Gao. You can also use other types of cake tins, baking trays, food storage containers, or deep plates. Although the traditional version is round-shaped, a square container works too.
  • A steamer. If unavailable, you can improvise and make your own steaming setup using a wok/pot and a small bowl. Check out my post on Pumpkin Mochi Cake to learn how it works.

Cooking procedure

Prepare dried ingredients

Soak Chinese dates and walnuts until they’re well rehydrated. This makes chopping much easier. Also, they tend to release more aroma during cooking.

Brush a thin layer of oil over the inner surface of the cake tin (or the container of your choice), and line the bottom with parchment paper.

Cooking steps

Drain the Chinese dates and walnuts and remove the pits of the dates if any (Remember to keep one whole date for garnishing later). Finely chop them by hand or using a food processor.

Add glutinous rice flour and regular rice flour into a large mixing bowl. Put in the chopped dates and nuts. Mix until everything is well incorporated.

In a saucepan, add dark brown sugar, ginger, and water and bring to a boil. Reduce heat to low, and let the mixture simmer with the lid on for three minutes or so. Remove the ginger, then stir in the oil. Whisk until fully incorporated.

Pour about 90% of the hot sugar liquid over the flour mixture. Mix and lightly knead. Add the remaining liquid gradually until a soft dough forms. Depending on the evaporation loss while simmering, you may not use all the liquid, or you might need to add a little extra water. Please feel free to adjust.

Dough for making Nian Gao

Transfer the dough into your prepared cake tin/container. Use a spatula to flatten the surface and insert a whole date into the centre of the cake.

Place the cake tin/container into the steamer basket. Then, place the steamer basket on top of the wok/pot filled with boiling water. Cover with the lid and steam for 45 minutes over medium heat.

🛎TIPS:

  • Remember to check the water level halfway through steaming and top up if necessary.
  • Do not oversteam your Nian Gao, or it will become dry and tough to chew. The best way to check the doneness is to poke a toothpick or chopstick through the centre of the cake. If it comes out clean, the cake is fully cooked.

How to serve

You can enjoy Chinese New Year rice cake in two ways:

  • Slice and eat it at room temperature. Slightly grease your knife before cutting to avoid sticking. Refrigeration also makes slicing easier as the cake will become firmer.
Pan frying Nian Gao
  • Pan-fry sliced Nian Gao. You may fry it with just a little oil until it softens and the surface forms blisters. Alternatively, coat each slice with a layer of beaten egg then pan fry with oil. This creates an extra crispy crust.

Storage suggestions

When preparing for Chinese New Year, I always make Nian Gao ahead of time. You can leave it on the counter for 1 day, or keep it in the fridge for up to 5 days. Remember to put it in an air-tight bag/container to avoid drying out.

Nian Gao freezes very well too. Cut it into pieces before freezing. Defrost in the fridge then enjoy it at room temperature, or pan-fry it without defrosting.

I also recommend you make several cakes at once and give them to family and friends as gifts. Nian Gao makes a wonderful present at this important festival. It’s a great way to wish prosperity to your loved ones.

  • 100 g dried Chinese dates (aka jujube)
  • 100 g walnuts (or peanuts)
  • 450 g glutinous rice flour

  • 180 g dark brown sugar (or muscovado sugar, brown rock sugar)
  • 1 thumb-sized ginger, sliced
  • 470 g water
  • 45 g coconut oil (or neutral cooking oil) plus a little for coating

Make the dough

  • Pour about 90% of the hot sugar liquid over the flour mixture. Mix and lightly knead. Add the remaining liquid gradually until a soft dough forms. Depending on the evaporation loss while simmering, you may not use all the liquid, or you might need to add a little extra water. Adjust accordingly.

Steamed the cake

  • Brush a thin layer of oil over the inner surface of a 20 cm (8 in) cake tin. Place a piece of baking paper at the bottom. Transfer the dough into the tin. Flatten the surface. Insert the remaining date in the middle of the cake.
  • Bring water to a full boil in the wok/pot which you use for steaming. Place the cake tin into the steaming basket or over a steaming rack. Cover with a lid and leave to cook over medium heat for 45 minutes (check the water level halfway through and top up if necessary).

Serve the cake

  • Let the cake cool naturally in the tin. Then gently take it out. You may slice it and eat it straight away. Or, store it in the fridge, then slice and pan fry in a little oil until both sides blister.

Store the cake

  • Put the cake in an air-tight bag/container once completely cooled. You can leave it on the counter for 1 day (unless the room is very warm), or keep it in the fridge for up to 5 days.
  • It freezes well too. Slice it into pieces before freezing. Defrost in the fridge then enjoy it at room temperature, or pan-fry it without defrosting.
