Hi Jasmine! Unfortunately, wheat starch is quite unique and doesn’t have a direct substitute that will yield the same results, especially in terms of texture. If you’re unable to find it locally, you might be able to order it online. Alternative, try my dumpling recipes using regular flour, such as Pan-Fried Pork Dumplings.

Yes, the three main ingredients are wheat starch, tapioca starch and hot water. If unavailable, tapioca starch can be replaced by either cornstarch or potato starch. Hope this is clear. Happy cooking!

The main ingredients are wheat starch, tapioca starch (can be replaced by cornstarch/potato starch) and water. Through experiments, I found the ideal ratio is 1:1:1. That is to say, these three ingredients share equal volume (Attention: NOT equal weight).
Is is a 50/50 blend of cornstarch and potato starch or is it either cornstarch or potato starch. By the three ingredients I assume you mean wheat starch, other starch and water.
