Do you crave a bowl of soothing soup from time to time? I know I often do! One of my go-to favorites is Seaweed Egg Drop Soup—a dish that often comes to mind when I want something quick, nourishing, and full of umami flavor.

At its heart, this soup is a variation of Classic Chinese Egg Drop Soup, with an added taste of the sea from dried laver (seaweed) and papery dried shrimp (I’ll explain more about these ingredients later). Despite being seasoned with just a few simple condiments, it’s surprisingly tasty!

Much like Tomato and Egg Stir-Fry, often called the “National Dish of China”, this soup is one of those humble, homely dishes that many Chinese people learn to cook from a young age. If you’re curious about what authentic Chinese home cooking tastes like, I highly recommend giving this recipe a try.

About dried laver seaweed

Dried laver is the star ingredient of this dish. Known as Zǐ Cài/紫菜 (which literally means “purple vegetable”), it’s a type of seaweed commonly used in Chinese cuisine, especially in salads and soups. It’s the same variety as Japanese nori (used for sushi), but it often comes in a looser, more natural form. It softens quickly in water and adds a delicate, savory, ocean-like umami flavor.

In Chinese/Asian shops, Zǐ Cài is usually sold as a round, compact disk wrapped in plastic. It’s almost black in color with a hint of purple, and it turns a dark green hue once cooked.

Don’t confuse it with kelp (Hǎi Dài/海带), which is another type of seaweed with a much thicker, chewier texture.

Papery dried shrimp are tiny, very lightweight shrimp that have been sun-dried until crisp and delicate. They add a subtle seafood aroma and a savory depth to soups, dumpling filling, and stir-fries. You can use regular dried shrimp as a substitute for this recipe (see adaptation tips in the cooking instructions below).

Step 1: Infuse the oil

Add a splash of oil to a large saucepan or a wok, then place it over medium heat. Once the oil is warm, add the papery dried shrimp along with the light color parts of the scallions. Let them sizzle gently, stirring now and then, until they become fragrant and lightly golden (be careful not to burn then though).

🌟 NOTE: If using regular dried shrimp, remember to soak them to soften, then chop them finely to help release their flavor and mimic the lighter texture.

Step 2: Cook the eggs

Pour in water, gently as it may splatter slightly. Bring the water to a boil. Once the water is bubbling, start pouring in the lightly beaten eggs.

With one hand, slowly drizzle it into the saucepan in a thin, steady stream. At the same time, use your other hand to stir the soup gently in one direction—this helps create those beautiful egg strands.

🌟 NOTE: To enhance the flavor even more, use unsalted chicken or vegetable stock instead of water.

Step 3: Add the seaweed

As soon as the egg has set, add the seaweed, torn into small pieces, into the saucepan. Let it simmer for about 30 seconds, then turn off the heat.

🌟 NOTE: Most packaged dried laver seaweed is pre-cleaned and can be used directly. However, if the package recommends cleaning to avoid any dust or gritty bits, give it a quick rinse under cold water, then drain.

Step 4: Season the soup

Season the soup with light soy sauce, black rice vinegar, sesame oil, and a little salt and white pepper, adjusting to taste.

Finish by scattering the green parts of the scallions over the top for a vibrant lift. Serve the soup warm, and enjoy!

🌟 NOTE: In Chinese households, this soup typically has a clear, watery broth. However, if you prefer a thicker consistency, you can add a cornstarch slurry (see my recipe for Classic Egg Drop Soup for instructions).

This quick and comforting soup pairs beautifully with many meals, and I could honestly enjoy it any time of the day—whether with Scallion Flower Rolls for breakfast, alongside a quick Beef Chow Fun at lunch, or served at the end of a multi-dish dinner to balance out richer, heavier dishes. It also makes a light, soothing companion to Pan-Fried DumplingsSteamed Bao, or Chili Oil Wontons.

Ingredients

  • ¼ oz dried laver seaweed aka Zi Cai/紫菜 (see note 1)
  • 3 eggs
  • 1 teaspoon neutral cooking oil
  • 2 stalks scallions finely chopped
  • 1 tablespoon papery dried shrimp or regular dried shrimp (see note 2)
  • tablespoon light soy sauce
  • ½ tablespoon black rice vinegar
  • 1 teaspoon sesame oil
  • ¼ teaspoon salt or to taste
  • teaspoon ground white pepper

Instructions

  • Heat oil in a saucepan, then add papery dried shrimp and the light green part of the scallions. Sizzle until fragrant.
  • Carefully pour in 4 cups (1000ml) of water and bring it to a boil.
  • Use one hand to pour in the beaten eggs in a thin stream, while swirling the water in one direction with a spoon held in the other hand.
  • Once the egg strands form, add the seaweed, torn into small pieces. Leave to simmer over low heat for 30 seconds.
  • Turn off the heat and season the soup with light soy sauce, black rice vinegar, sesame oil, salt, and white pepper.
  • Finally, garnish with the remaining scallions and serve warm.

Notes

1. Dried laver (Zǐ Cài/紫菜) is the same type of seaweed as Japanese nori, but it often comes in a looser form, typically packed into a round disk and wrapped in plastic. See the blog post above to learn more.

Although not as well-known internationally as Sichuan or Cantonese cuisine, Yunnan food is one of the most beloved cuisines in China, celebrated for its incredible diversity and bold flavors. Among its many signature dishes, rice noodles hold a special place as a highly cherished staple in this southwestern province.

During my most recent trip to Yunnan, I ate rice noodle soup nearly every day (see image below). Today, I’m excited to share a recipe for Small Pot Rice Noodle Soup (Xiǎo Guō Mǐ Xiàn/小锅米线), a dish I thoroughly enjoyed during my stay in Kunming, the capital city of Yunnan.

This recipe features bouncy rice noodles and tender meat patties in a rich, flavorful broth. The broth is infused with the tangy kick of pickled vegetables and the umami depth of bean paste, then topped with crunchy vegetables. It stands out for its sophisticated flavor profile, harmonizing umami, savory, sour, spicy, and just a hint of sweetness.

  • Soak dried rice noodles in advance to reduce cooking time
  • Use fatty ground meat to enhance the overall flavor
  • Opt for high-quality stock to elevate the taste of the dish
  • Feel free to use vegetables that are readily available to you

I put all the ingredients for this rice noodle soup recipe into three groups.

Dried rice noodles

Dried rice noodles are the most widely available and convenient option. However, if you can find fresh rice noodles, that’s even better. In the image above, you can see the dried ones I found at my local Asian supermarket. These noodles are thicker than those typically used in Singapore Mei Fun. They also have a round shape, which sets them apart from the flat rice noodles commonly found in dishes like Beef Chow Fun.

🌟 NOTE: Unlike other southern regions of China, where rice noodles are called Mǐ Fěn (or Mei Fun)/米粉, Yunnan locals refer them as Mǐ Xiàn/米线. Essentially, they are the same thing.

For the meat patties

  • Ground meat – pork with a high content of fat is the classic choice, but you can also use beef, chicken, or turkey
  • Cornstarch
  • Salt
  • White pepper

For the soup

  • Unsalted stock – pork bone stock creates an authentic taste, but chicken stock works well too.
  • Pickled mustard greens – the key ingredient found in classic dishes like Pork & Sour vegetable Stir-fry and Sichuan Fish with Sour Vegetable. Other types of Chinese fermented vegetables, such as pickled cabbage, pickled radish, and pickled beans, are great alternatives. If these are difficult to find, sauerkraut or kimchi can serve as suitable substitutes.
  • Sichuan chili bean paste (aka spicy doubanjiang). This is an alternative to Zhaotong sauce used in traditional Yunnan small pot rice noodle soup but is hard to source outside Yunnan.
  • Light soy sauce
  • Chili oil
  • Chinese chives
  • Bean sprouts

🌟 NOTE: You can substitute Chinese chives and bean sprouts with other vegetables. Bok choy, Napa cabbage, spinach, pea shoots, watercress, scallions, and cilantro are excellent alternatives.

Step 1: Prepare the noodles

Different from dried wheat-based noodles, dried rice noodles can be soaked before cooking, which helps reduce the overall cooking time. However, soaking is optional if you’re short on time. To prepare, soak the noodles for 4 hours or overnight.

Once soaked, add them to a pot of boiling water and cook until they are nearly but not fully done. You can test their readiness by snapping a strand between chopsticks—it should break with slight resistance.

After parboiling, drain the noodles and rinse them under running water to stop further cooking. Once cooled, these noodles can be stored in the fridge and used whenever you’re ready to make this noodle soup recipe.

🌟 NOTE: Skip this step if you’re using fresh rice noodles which don’t require parboiling.

Step 2: Season the meat

Mix the ground meat with cornstarch, salt, pepper, and a little stock or water until it forms a cohesive and sticky mixture.

🌟 NOTE: Make sure to stir the ground meat thoroughly to ensure it holds together when shaped into patties in the next step and doesn’t fall apart while cooking in the soup.

Step 3: Cook the soup

Start by frying finely chopped pickled mustard greens in a little oil to remove excess moisture. Next, add Sichuan chili bean paste and fry it briefly to release its aroma.

Pour in the stock, followed by light soy sauce and sugar, and bring the liquid to a full boil. Then begin adding the meat patties.

Using the back of a spoon, flatten a portion of the meat into a thin piece, then gently slide it into the soup. Reduce the heat to low and let the meat patties simmer until they are fully cooked and no longer pink.

Step 4: Combine the dish

Add the parboiled rice noodles, Chinese chives, and bean sprouts to the soup, letting them cook gently over low heat. This step is quick, so be careful not to overcook. The noodles should be soft but not mushy, and the vegetables should retain a slight crunch.

Finally, taste the soup and adjust the seasoning with a little salt if needed. Once the noodle soup is divided into serving bowls, finish with a drizzle of chili oil, adjusting the amount to suit each diner’s preference.

Instructions

Parboil the noodles

  • *Skip this step if you’re using fresh rice noodles.
  • Soak dried rice noodles in cold water for 4 hours or overnight (see note 3). Drain well then put them into a pot of boiling water. Leave to cook until the noodles become 'al dente' (not yet fully cooked but can be snapped between chopsticks). Rinse them under tap water to stop further cooking. Set aside.

Season the meat

  • Put ground meat into a bowl. Add cornstarch, salt, white pepper, and 1 tablespoon of stock or water. Mix until it becomes a sticky mixture. Set aside.

Cook the soup

  • Heat oil in a wok or a pot. Stir in finely chopped pickled mustard greens. Fry for 20 seconds or so, then add Sichuan chili bean paste. Sizzle until fragrant.
  • Pour in stock, then add light soy sauce and sugar. Bring it to a full boil.
  • Use a spoon to shape a portion of the ground meat into a thin patty and carefully slide it into the soup. Repeat this process with the remaining meat. Allow the patties to simmer in the soup for 1 minute, or until they are no longer pink.

Combine the dish

  • Put the parboiled noodles into the soup, along with Chinese chives and bean sprouts. Leave to simmer over low heat. Once the noodles are fully cooked, give the soup a taste to decide if additional salt is necessary.
  • Transfer the noodle soup into two large serving bowls. Drizzle chili oil over and serve immediately.

Notes

1. You can also use fresh rice noodles, which can be directly added to the soup without parboiling. In this case, use around 1 pound of fresh noodles for two bowls of noodle soup.
2. Pickled mustard greens can be replaced with other types of fermented vegetables, such as pickled cabbage, pickled radish, pickled beans, kimchi, or sauerkraut.
3. Soaking rice noodles isn’t compulsory. You may cook them straight away, but this will require a longer cooking time.

A wholesome stew made in simple steps, braised beef with daikon is a classic Chinese dish perfect for both weekday dinners and special gatherings.

Recently, I’ve been craving hearty stews and soups as the weather turns chilly. Apart from Beef & Potato Stew and Pork Rib Soup, a dish my dad frequently cooked when I was young came to mind — Braised Beef with Daikon (Luó Bó Dùn Níu Ròu/萝卜炖牛肉). Cooking and eating it has brought me so much comfort, and my family enjoyed it immensely as well.

My son asked: “Which regional cuisine does this dish belong to?” As far as I know, this dish is popular across China, in both restaurants and family homes. With beef and daikon being the key components, different versions vary in seasoning choices. For example, Sichuan chefs would add a dollop of Doubanjiang/豆瓣酱 for an aromatic heat (similar to my recipe for Spicy Beef Noodle Soup), while the Cantonese version calls for a special sauce called Chu Hou Paste/柱侯酱.

The recipe I’m sharing today uses a set of basic condiments and spices commonly found in meat-based Chinese stews, such as Red Braised Pork Belly. They create highly aromatic, complex flavors that work wonderfully with tender beef and soft daikon. Every bite is a delight, I promise!

  • Beef shank or brisket are ideal cuts
  • Daikon can be replaced by other vegetables, such as carrots, potatoes, winter melon, etc.
  • Use a cast iron casserole if available. An Instant Pot is even better
  • Make a big batch and store it in portions for later use

Here is the list of ingredients you need for this recipe:

  • Beef shank (shin) or brisket. Both offer a balance between tender meat, a gelatinous mouthfeel, and a fibrous yet flavorful bite, making them perfect for slow-cooked braising dishes. Plus, they’re economical choices.
  • Daikon, also known as white radish or mooli. Choose the ones with smooth, tight-looking skin that feels firm when gently squeezed.   
  • Aromatics: ginger and garlic
  • Chopped tomato. It adds extra flavor, and its acidity helps tenderize the meat.
  • Spices: star anise, bay leaves, cassia cinnamon, and Sichuan pepper. It’s fine to skip one or two spices. If you don’t have whole spices, use ½ teaspoon of five spice powder to substitute.
  • Condiments: light soy sauce, dark soy sauce, oyster sauce, Shaoxing rice wine, salt, white pepper, and sugar
  • Garnish: scallions or cilantro (coriander)

NOTE: See the recipe card at the end of the post for ingredient quantities.

Step 1: Blanch the beef

Cut the beef into large cubes, about 1 inch (2½ cm) on each side. Then put the pieces into a pot filled with cold water.

First, bring it to a boil. Then leave the water to roll for about 2 minutes. Use a spoon to skim off any brown foam on the surface.

Then, fish out the beef and discard the water.

🌟 NOTE: Unlike blanching vegetables like broccoli, it’s important to start by putting the beef in cold water to slowly draw out blood and impurities for a clearer broth. Starting with hot water causes the proteins to coagulate quickly, making the meat tougher.

Step 2: Braise the beef

For the braising part, use a pot that maintains heat well and comes with a tight lid (e.g. a cast iron casserole). Firstly, sizzle ginger and the spices in a little oil over low heat to slowly extract their aroma.

Then tip in the blanched beef. Fry over high heat for a couple of minutes. Add chopped tomato, along with all the condiments.

Pour in hot water, then give everything a good swirl. Once the water starts boiling, reduce the heat to the lowest.

Cover the pot with a lid and let it simmer for 60 to 90 minutes until the meat achieves the tenderness that you prefer.

🌟 NOTE: Remember to check the water level halfway through this step. This is especially important if the pot lid isn’t tight enough, as it may allow excessive water evaporation. Add more water if necessary.

Step 3: Cook the daikon

Once the beef is tender, add the chopped daikon and garlic cloves. Mix well then leave to cook over medium heat for about 15 minutes, until the daikon becomes very soft and absorbs some of the broth.

If you prefer a thick, more intensely flavored broth, turn up the heat and cook a little longer with the pot uncovered.

Finally, give the dish a taste to decide if additional salt is necessary. Garnish with chopped scallions or cilantro before serving.

If you own an Instant Pot or a pressure cooker, you can speed up the braising process by following this procedure:

  1. After blanching, fry the spices and the drained beef in a little oil using the “sauté” function.
  2. Add chopped tomato, all the condiments, and hot water (a little less than using a regular pot). Cook on high pressure for 25 minutes followed by a natural release of the pressure.
  3. Put in daikon and garlic. Cook on high pressure for a further 5 minutes.

Keep any leftover in an airtight container in the fridge for up to 3 days. Reheat it until piping hot before serving.

If you plan to make this dish in big batches and serve later, blanch and braise the beef as instructed. Store it in the freezer, divided in portions, for up to 3 months. Defrost the amount you need and cook with fresh daikon.

  • 1 lb daikon aka white radish, mooli, cut into chunks
  • 10 cloves garlic peeled
  • Scallions or cilantro (coriander)

Instructions

Blanch the beef

  • Cut the beef into bite-sized cubes. Put them into a pot and fill it with plenty of cold water.
  • Bring the water to a full boil. Let it boil for a couple of minutes while skimming off any foam appearing on the surface. Drain the beef and discard the water.

Braise the beef

  • Pour oil into a clean pot. Add ginger slices, star anise, bay leaves, cassia cinnamon, and Sichuan pepper. Sizzle them over low heat until fragrant.
  • Stir in the drained beef chunks and fry for a minute or so. Add chopped tomato, light soy sauce, dark soy sauce, oyster sauce, Shaoxing rice wine, sugar, salt, and white pepper. Pour in about 1½ cups (360ml) of hot water, or just level with the meat.
  • Bring the water to a boil then turn down the heat to low. Cover the pot with a tight lid and let it simmer for 1 to 1½ hours, until the meat turns tender (see note 2 for the Instant Pot method).

Cook the daikon

  • Stir in the daikon pieces and garlic cloves. Cover the pot and leave to cook over medium heat for another 15 minutes or so, until the daikon becomes soft to bite.
  • Optionally, cook a little longer over high heat without the lid if you wish to reduce and thicken the broth.
  • Transfer the dish to a serving bowl/plate. Garnish with scallions or cilantro and serve immediately.

Notes

1. You may omit 1 or 2 spices if unavailable. Alternatively, use ½ teaspoon of five spice powder  to replace whole spices.
2. Instant Pot Method:
  • Fry spices and blanched beef in a little oil using the “sauté” function. 
  • Add chopped tomato, all the condiments, and hot water (a little less than using a regular pot). Cook on high pressure for 25 minutes followed by a natural release of the pressure.
  • Put in daikon and garlic. Cook on high pressure for a further 5 minutes.

A nourishing dish that’s simple to prepare and lightly seasoned, Chinese pork rib soup warms both your body and heart.

Whenever the temperature drops, I crave a tasty bowl of Chinese soup, especially the meat-based ones with a clear broth. Today’s recipe, pork rib soup, is a great example of how a simple, humble soup can be so nourishing and tasty.

Classic Chinese pork rib soup (Pái Gǔ Tāng/排骨汤) commonly comes with a clear broth, known as Qīng Tāng/清汤, which is flavored with spices and/or herbs but free from soy sauce or other intensely flavored condiments (unlike brown-colored dishes like Beef with Daikon or Braised Pork Belly. The ribs are cooked to a tender texture and accompanied by a variety of vegetables.

What I love most about this dish is its simplicity and soothing taste. It’s beginner-friendly and can be partially prepared in advance. The seasoning is minimal, which allows the natural taste of the ingredients to shine.

Here is a simple list of ingredients you need to make this soup:

  • Scallions or coriander, for garnishing
  • Salt

About pork ribs

In Chinese cuisine, pork ribs are commonly cut into bite-sized pieces before cooking (Think Sweet & Sour Ribs and Black Bean Ribs). This makes them easy to handle with chopsticks. The required cooking time is also reduced.

If you don’t have access to an Asian butcher, feel free to use regular-sized ribs for this recipe. Pick the pieces that have a good bone-to-meat ratio.

Vegetable substitutions

I choose sweetcorn and carrots for their vibrant colors and sweet tastes that balance the salty flavor. Daikon (white radish), lotus roots, winter melon, and kelp (Kombu) are popular choices too.

About the seasonings

Apart from salt, you only need garlic and white or black peppercorns. This simple combination eliminates any gamey taste of the meat (known as Xīng Wèi/腥味). It also lends aromas and a subtle warming heat to the soup.

To keep the soup clear, use unpeeled garlic and whole peppercorns. If unavailable, it’s fine to use ground white pepper as a substitute.

Step 1: Blanch the ribs

In a pot or wok, submerge the ribs in plenty of cold water. Bring it to a full boil and leave it to blanch for about 2 minutes.

During this time, you’ll notice brownish foam forming on the surface. Skim it off with a spoon. Then use a slotted spoon to remove all the ribs and discard the water.

🌟 NOTE: The blanching procedure (known as Chāo Shuǐ/焯水 in Chinese) is essential as it removes any impurity of the pork and reduces its gamey taste. Please do not skip it.

Step 2: Simmer the ribs

Return the ribs to the cleaned pot or wok. Cover them generously with hot water. Add salt, a bulb of garlic (washed but unpeeled), and whole peppercorns (see note below).

🌟 NOTE: To prevent peppercorns from floating around, place them in a strainer/infuser (see image above), or a small spice bag made of muslin cloth.

Bring the water to a boil, then turn the heat down to the lowest setting. Leave the ribs to simmer with the lid on for 35 to 40 minutes, or until the meat becomes tender.

Step 3: Cook the vegetables

Remove the garlic and peppercorns from the pot. Add sweet corn, sliced lengthwise into strips or cut into rounds, along with chunks of carrot. Pour in more hot water if you prefer more broth. Cook over medium heat with the lid on for 8 to 10 minutes, or until the carrots are soft.

Taste the broth and add more salt if necessary. Finally, garnish the soup with finely chopped scallions or cilantro (coriander).

🌟 NOTE: If using other vegetables, you may need to adjust the cooking time. For example, daikon and lotus roots take longer to cook through.

The Instant Pot method

You can use an Instant Pot to speed up the second step by setting it to cook for 15 minutes on high pressure, followed by a natural release. Step 1 and step 3 can be done in the Instant Pot using the sauté function or in a regular pot on the stovetop.

If you wish to prepare this soup in advance, follow these tips for best results:

  • Blanch and cook the ribs as instructed. Remove the garlic and peppercorns.
  • Store the meat and soup in an airtight container in the fridge for up to 3 days or in the freeze for 3 months.
  • Defrost then add the vegetables. Cook until the carrots soften.

  • Bring the water to a full boil then turn the heat down to low. Cover the pot with a tight lid and leave to simmer for 35 to 40 minutes, or until the meat becomes tender.

Cook the vegetables

  • Take out the garlic and peppercorns. Add the sweetcorn pieces and carrot chunks. Increase the heat to medium. Leave to boil with the lid on for about 10 minutes until the carrot softens.
  • Taste the soup to decide if extra salt is needed. Garnish with chopped scallions or cilantro before dishing out to serve.

Notes

1. Bite-sized pork ribs are ideal for this dish. However, regular-size ribs work well, too. Prolong the cooking time accordingly.
2. You can use a mixture of whole white pepper and black pepper, or either one of them. Otherwise, use ¼ teaspoon of ground white pepper as a substitute and add it at the very end of the cooking process. 
3. You may use other vegetables to replace sweetcorn and carrots, such as daikon, lotus root, winter melon, kelp, etc.

Slippery noodles served in an intensely flavored broth, Sichuan hot and sour noodle soup is utterly irresistible. It’s simple and quick to prepare.

There are a few dishes that always make me drool, merely at the thought of them. Hot and Sour Noodle Soup (Suãn Là Fěn/酸辣粉), a classic Sichuan street food, undoubtedly tops my list. If you enjoy exciting flavors, this recipe won’t disappoint.

I used to eat this dish regularly at a street stall outside my school. The first time I ventured to try it, I instantly fell in love. It was like a flavor explosion in my mouth: hot, tangy, and mouth-numbing. Incredibly intense but utterly irresistible.

I started making it after I left China and was surprised by its simplicity. Once you have all the ingredients ready, it’s just a matter of assembling them.

Unlike other classic noodle dishes, such as Dan Dan Noodles, Chongqing Noodles, and Sweet Water Noodles, Suan La Fen offers a highly pleasurable mouthfeel by using slippery, springy glass noodles, which elevate the joy of eating to new heights.

Try this variation using regular noodles

Here are all the ingredients you need for this recipe. Scroll down to learn substitute ideas.

Glass noodles

The glass noodles in Suan La Fen are made from sweet potato starch and known as Fěn Tiáo/粉条, which literally translates to “starch strips”. Unlike wheat-based noodles, they have a translucent appearance once cooked and offer a super smooth, slippery texture, which I particularly adore.

🌟 Substitutes:

  • You may also use glass noodles made from other types of starch. For example, mung bean vermicelli (aka bean thread noodles), known as Fěn Sī/粉丝, is a good alternative (the type I used in my recipe for Glass Noodle Salad).
  • Wheat noodles or rice noodles can also serve as a substitute if you’re not strictly aiming for authenticity. Or, try Suan La Mian, a close cousin which features regular noodles.

For the soup

Toppings

  • Fried soybeans, for a crunchy texture and nutty flavor (see how to cook them in later sections)
  • Preserved Sichuan pickle (known as Zha Cai/榨菜), for an umami saltiness and extra crunch
  • Scallions, or garlic sprouts
  • Cilantro (coriander), optional

🌟 Substitute: Fried soybeans can be replaced by roasted peanuts.

Step 1: Soak the noodles

Glass noodles need to be rehydrated before cooking. Simply soak them in warm water for about 30 minutes. They’ll soften and become pliable.

Pay attention not to soak them for too long so that the strands turn overly soft. If you don’t plan to cook them right away, drain them well for later use.

Step 2 (optional): Fry soybeans

Skip this step if you’re using shop-bought roasted peanuts as a substitute. However, if you wish to create the authentic taste of the dish with fried soybeans, follow this procedure:

  • Soak dried soybeans overnight to soften. Drain and pat dry.
  • Fry them in a little oil over medium heat until golden brown and crispy.

I often cook an extra batch of fried soybeans, as they make a delicious snack on their own with a little sprinkle of salt.

Step 3: Cook the noodles

Bring plenty of water to a full boil. Add the drained noodles. Leave to cook over high heat until just cooked through (be careful not to overcook them). The noodles should turn almost transparent and have an elastic, springy texture, yet still be easily snapped between the teeth.

Step 4: Assemble the soup

While waiting for the noodles to cook, heat the stock and then pour it into serving bowls. Stir in minced garlic, black rice vinegar, light soy sauce, Chilli oil, and Sichuan pepper.

Add cooked noodles. Top with fried soybeans (or roasted peanuts), Sichuan pickle, scallions, and coriander if using. Serve immediately.

Instructions

Prepare the noodles

  • Soak glass noodles in warm water for about half an hour until pliable.
  • Bring a pot of water to a full boil. Add the noodles and boil them until they become translucent and are just cooked through. The process is quick, so remain vigilant to prevent overcooking. Taste the noodles if you’re unsure of their doneness.

Prepare the soup

  • While waiting for the noodles to cook, heat the stock until simmering. Pour it into two serving bowls.
  • Add black rice vinegar, light soy sauce, Chinese chili oil, Sichuan pepper, and minced garlic (remember, the quantities in the ingredient list are for two bowls). Stir well, then taste. Add a little salt if necessary.

Assemble the dish

  • Put drained noodles into the bowls. Top with fried soybeans and preserved Sichuan pickle. Garnish with scallions and coriander if using.

Notes

How to make fried soybeans:
  • Soak dried soybeans overnight. Drain and pat dry with paper towels.
  • Pour a little oil and the soybeans into a wok/skillet. Fry over medium heat until the beans are nicely browned and crispy.
  • Transfer the beans onto paper towels to absorb any excess oil.

Today, I’m introducing Chinese Tofu Soup with Vegetables (豆腐鲜蔬汤), a refreshing, soothing dish that I often turn to when my stomach craves a warm hug, especially after a hearty feast or on chilly days.

Why this recipe

Although I’m a big fan of well-spiced food (think Mapo Tofu, Sichuan Mala Chicken), I also appreciate lightly-seasoned dishes that allow each ingredient to show off its natural taste. This tofu and vegetable soup is a great example.

Also, what makes this simple dish stand out is the rich umami taste (Xiān Wèi/鲜味) it offers without using any artificial flavoring. Dried shiitake mushrooms, tomatoes, and dried shrimp are the key contributors. As flavorful as can be, it calls for a short ingredient list, minimum preparation, and it’s very low in calories. So you need to give it a try!

Ingredients

To make this tofu and vegetable soup, here is the list of ingredients that you need:

  • Tofu, soft or medium-firm
  • Bok choy (aka pak choi), or napa cabbage
  • Tomato
  • Dried shiitake mushrooms, or other flavorful mushrooms
  • Dried shrimp, see below for vegan substitutions
  • Scallions
  • Seasonings: light soy sauce, salt, white pepper, sesame oil

Dried shrimp & substitutes

Dried shrimp is one of my secret ingredients for making extra tasty dishes. A small amount of it creates a distinct umami flavor that goes a long way. It works in a similar way to shrimp paste and fish sauce in Southeast Asian cuisines.

In Chinese/Asian stores, you can find two types of dried shrimp (See image above): the big, headless, orange-colored ones, and the small, whole-bodied, pale ones. Both work well for the recipe (I used the former for shooting this recipe).

🛎 Vegan substitutes: If you wish to make this dish vegan-friendly, omit dried shrimp and use mushroom/vegetable broth to replace water for the soup.

Cooking procedure

This dish takes less than 5 minutes to cook. But you’ll need to take some time to pre-soak the dried mushroom and dried shrimp beforehand.

Step 1: Rehydrate the dried ingredients

Dried shiitake mushrooms are wonderful at lending earthy, umami flavor to dishes. They’re much more aromatic than fresh mushrooms and thus are a better option. As I explained in my Guide to Shiitake Mushrooms, there are two methods to rehydrate them:

soaking and cutting shiitake mushrooms.
  • Soak them in cold water for 6 hours or overnight (This produces a better result)
  • Soak them in hot water for 30 minutes (This saves you when time is tight)

After soaking, squeeze water out of the mushrooms then cut them into thin slices. Make sure you don’t discard the soaking water. It will be used in the soup.

🛎 Tip: If you use fresh mushrooms as a substitute, consider using chicken, mushroom, or vegetable stock to enhance the flavor of the dish.

Dried shrimp also needs to be rehydrated to release its full flavor. Use a little hot water to soak for 10 minutes. Then chop the softened shrimp into finer pieces. You can also keep the soaking water to add to the soup later.

Step 2: Prepare other ingredients

Cut tofu into cubes that you can easily scoop up with a spoon. Slice tomatoes into wedges. Chop bok choy into bite-sized pieces and separate them into two piles: stems and leaves. Finely chop scallions and separate the white the green parts too.

Step 3: Cook the soup

Firstly, heat oil in a wok/pot. Then sizzle the white part of the scallions and dried shrimp to bring out their fragrance.

Add shiitake mushroom and tomato and stir fry until the tomato turns a little mushy.

Pour in the mushroom soaking water (do so gently and leave out any residue at the bottom of the bowl) and the shrimp soaking water. Top up with some hot water. Bring to a full boil.

Gently slide in the tofu cubes. Leave to cook uncovered for about 2 minutes.

Add the bok choy stems and continue simmering for 20 seconds or so.

Then turn off the heat. Add the leafy part of the bok choy to the soup, along with light soy sauce, salt, white pepper, and sesame oil. Give it a final stir then garnish with scallion greens.

🛎 Tip: Do not overcook bok choy to prevent it from losing crunchiness and becoming stringy. 20 seconds is enough to cook the stems and the leafy part can be cooked through simply by the heat of the soup.

Serving ideas

Compared to light soups like Egg Drop Soup, this tofu soup is quite substantial as it includes both protein and vegetables. So I sometimes make it for lunch and pair it with staples like Scallion Pancakes, Steamed Flower Rolls, or Zucchini pancakes.

You can also include it in a typical multi-dish Chinese meal featuring several savory dishes and steamed rice. If you enjoy hot food, add a dash of Chinese Chili Oil for extra kick.

Ingredients

  • 4 dried shiitake mushrooms see note 1 for substitutes
  • 1 tablespoon dried shrimp see note 2 for substitutes
  • 1 lb tofu soft or medium-firm
  • 1 medium tomato
  • 9 oz bok choy or napa cabbage
  • 2 stalk scallions
  • 2 teaspoon neutral cooking oil
  • 1 tablespoon light soy sauce
  • ¼ teaspoon salt
  • ¼ teaspoon ground white pepper
  • ½ teaspoon sesame oil

Instructions

Soak the dried ingredients

  • Rinse dried shiitake mushrooms then soak them in 2 cups (500ml) of water for about 6 hours or overnight (If in a hurry, soak in hot water for 30 minutes). Take them out (Keep the water in which they’re soaked for later use) and trim off the stems then cut into thin slices.
  • Soak dried shrimp in ¼ cup (60ml) of hot water for about 10 minutes. Chop it into smaller pieces. Keep the soaking water.

Prepare other ingredients

  • Cut tofu into bite-sized cubes. Slice tomatoes into wedges. Separate the stems and leaves of bok choy. Cut them into 1-inch (2½ cm) pieces. Finely chop the scallions, and keep their white and green parts separated.

Cook the soup

  • Heat cooking oil in a wok (or a pot). Sizzle the white part of the scallions and dried shrimp until fragrant. Stir in the mushroom and tomato. Fry briefly until the tomato becomes a little mushy on the edge.
  • Slowly pour in the water in which the mushrooms are soaked, leaving any impurities at the bottom of the bowl. Add the dried shrimp soaking water and 2 cups (500 ml) of hot water. Bring it to a full boil.
  • Slide in the tofu cubes. Leave to simmer over medium heat for 2 minutes.
  • Add the stem part of the bok choy. Cook for a further 20 seconds.
  • Turn off the heat. Stir in the leafy part of the bok choy. Add light soy sauce, salt, white pepper, and sesame oil. Mix well then garnish with the green part of the scallions.

1. If dried shiitake is unavailable, use fresh shiitake, or other flavorful mushrooms. In this case, you can use chicken, mushroom, or vegetable stock, instead of water, to enhance the flavor.
2. To make this dish vegan-friendly, skip dried shrimp and use vegetable stock to compensate.

What is shrimp with lobster sauce

Today’s recipe, Shrimp with Lobster Sauce (虾龙糊), is a reader-requested dish that I’ve researched and tested recently. It instantly became a new favorite in our Red House.

You must have tasted or heard of shrimp with lobster sauce if you are familiar with Chinese takeout food. Said to be created by Chinese immigrant chefs in America, it’s among the most popular takeout dishes for many decades.

A typical version of shrimp with lobster sauce consists of shrimp, ground pork, peas (sometimes with carrots), and egg white strands served in a glossy, thick sauce that has a pronounced umami taste.

Where is the lobster?

Don’t be surprised about the fact that there isn’t any lobster in this dish. Think Fish Fragrant Pork (aka shredded pork with garlic sauce), a signature dish of Sichuan cuisine, which doesn’t contain any fish.

Similar to the stories about fish fragrant dishes without fish, it is said that the flavor profile of this dish resembles how lobster is seasoned in Cantonese cuisine. Other tales say that the sauce tastes like lobsters which I don’t find very convincing.

But no matter what the story is behind it, this dish is, without a doubt, very tasty and warming. And it’s definitely home-cook-friendly. Read on to find out how simple it is to make!

Top tips

Here are some key tips before I start to provide details of the recipe:

  • Cook the shrimp briefly to retain its crunchiness.
  • Keep the seasoning simple to create a clean taste.
  • Control the heat and cornstarch quantity to achieve the perfect consistency.

Ingredients & substitutes

To make shrimp with lobster sauce, you’ll need the following ingredients:

Shrimp

Shrimp (prawn) is the star ingredient of the dish. No matter what size it comes in, make sure to use raw ones instead of pre-cooked ones. Deveining shrimp is not a compulsory procedure. But you may do so if your shrimp is quite large and you want it to be aesthetically pleasing.

Ground pork

Ground pork is another protein used in this recipe. Please feel free to replace it with ground chicken/turkey.

Peas or other vegetables

Add frozen peas for extra color and nutrition. Carrots, sweetcorn, asparagus, and mushrooms can be used as substitutes. When necessary, cut them into small cubes to speed up the cooking process.

Egg white

Egg white is used in the sauce for extra flavor, texture and nutrition. It’s also fine to use a whole egg, with the yolk, like how you make the classic egg drop soup.

Aromatics

Garlic, ginger and scallions are the aromatic trio of Chinese cuisine (what exists in my kitchen at any given time). Mince the first two to fry with pork and use the other to garnish.

Broth with seasonings

To make the “lobster sauce”, you’ll need:

  • Unsalted or low-sodium Chicken broth (learn a homemade recipe in my post Wonton Soup). If unavailable, substitute with water flavored with chicken or mushroom seasoning powder (Jī Jīng/鸡精 or Mó Gū Jīng/蘑菇精).
  • Shaoxing rice wine, to add aroma and diminish the fishy taste of seafood (a concept in Chinese cuisine known as Qù Xīng/祛腥). Replace it with dry sherry if you wish to make the dish gluten-free.
  • Salt and sugar, to create a savory-sweet taste (reduce or omit salt if your broth is already salted).
  • Ground white pepper, to add a hint of heat.
  • Toasted sesame oil, to provide extra fragrance (not to overuse as it can be overpowering).

Cornstarch slurry

In Chinese cuisine, cornstarch (or tapioca, potato, sweet potato starch, etc.) is commonly used to thicken a sauce or soup. Make it into a slurry with a little water. The quantity recommended in the recipe card below can be adjusted based on your preference for consistency.

Cooking instructions

Step 1: Prepare the shrimp

Under running water, rinse the shrimp to remove the slimy coating. Drain and lay them over kitchen paper to remove excess water.

Step 2: Fry the pork & aromatics

Heat a little oil in a wok or a pan over medium high heat (use neutral-flavored oil, such as sunflower, canola, vegetable oil, etc.). Add minced garlic, ginger and ground pork. Stir fry until the aromatics become fragrant and the pork loses its pink color.

Step 3: Fry the shrimp

Add the shrimp. Toss to cook it quickly. As soon as it curls up and starts to turn pink, move on to the next step (do not overcook).

Step 4: Add the broth

Pour in the chicken broth, along with the peas. Season with Shaoxing rice wine, salt, sugar, white pepper and sesame oil. Cook until the mixture comes to a boiling point.

Step 5: Thicken the sauce

Turn the heat down so that the broth is at a very gentle simmer.

Stir the cornstarch slurry very well then slowly pour it into the broth. Swirl with a spatula/spoon as it thickens.

Step 6: Add the egg white

Once the broth is thick enough to coat the spatula/spoon with a thin layer, pour in the beaten egg white (lightly beaten with a little water). Stir gently to form the tiny egg ribbons. Turn off the heat and sprinkle chopped scallions to garnish.

What to serve with

While the dish is piping hot, scoop it over a bowl of steamed rice. Let the shiny, silky sauce run through the gaps and flavor each rice grain. I’m sure you’ll enjoy every mouthful!

Alternatively, treat it like a soup (increase the sauce volume if you wish) and pair it with flour-based staples, such as Scallion Pancakes, Mantou (Plain steamed buns), Hua Juan(Flower Rolls), etc.

Or, if you’re planning a multi-dish meal, serve it with other quick and easy dishes, such as Tomato & Egg Stir-Fry, Garlic Bok Choy, Black Pepper Beef, etc. while having steamed rice as the staple.

Ingredients

  • ½ lb shrimp headless and skinless
  • ½ tablespoon neutral cooking oil
  • 1 teaspoon minced garlic
  • ½ teaspoon minced ginger

Instructions

  • Rinse the shrimp to remove the slimy coating on its surface. Drain and pat dry with kitchen paper. Set aside.
  • Heat oil in a wok/saucepan. Stir in minced garlic, ginger and ground pork. Fry until the pork becomes pale. Add the shrimp. Toss to cook.
  • As soon as the shrimp curls up and starts to turn pink, pour in chicken broth. Add peas and seasonings (Shaoxing rice wine, salt, sugar, white pepper, and sesame oil).
  • Once the broth comes to a boil, turn down the heat to a gentle simmer. Slowly pour in the cornstarch slurry while swirling with a spatula/spoon (remember to stir the slurry before pouring in case any starch sinks to the bottom).
  • When the sauce reaches the desired consistency (thick enough to coat the spatula/spoon), pour the egg white in a thin stream while slowly swirling.
  • Garnish the dish with chopped scallions. Serve immediately with plain rice, alone or with other savory dishes.

Notes

1. If using salted chicken broth, reduce or omit salt (taste to adjust). Alternatively, use water mixed with chicken or mushroom seasoning powder (Jī Jīng/鸡精 or Mó Gū Jīng/蘑菇精) which are available in Chinese stores.
2. The restaurant versions often use egg white only for the look. It’s perfectly fine to use a whole egg if you wish.

Now and then I crave a bowl of chicken noodle soup, a dish my parents often made for my brother and me during school lunch breaks (we used to walk home at noon for a quick lunch and nap before returning to school at 2 pm). I enjoy its simplicity and soothing nature to this day.

If you like chicken dishes and all-in-one dishes like One-pot Chicken Rice, Chicken Chow Mein, etc, today’s recipe is a good one to try.

A classic dish made easy

A bowl of Chinese chicken noodle soup (Jī Tāng Miàn/鸡汤面) typically consists of clear broth, thin wheat noodles, shredded chicken, and a few strands of leafy greens. Unlike many flavor-bursting dishes on my blog (e.g., Hot and Sour Noodles), this dish is clean, light and calming.

My parents used to cook a whole chicken the night before and then use some of the broth and meat for noodle soup and leftovers for other meals. Today’s recipe is based on the traditional method but with a simpler approach and additional mushrooms for extra flavor.

It takes around 40 minutes from start to finish if you organize the procedure well (excluding the passive soaking time). Read on and give it a try!

  • Choose skin on and bone in chicken legs/thighs.
  • Use shiitake mushrooms to boost the umami taste.
  • Season the broth lightly. Avoid overpowering condiments.
  • Do not cook the noodles in the broth.

Ingredients & substitutes

Here are the ingredients you need for this noodle soup recipe:

Chicken

Chicken legs or thighs make the tastiest chicken broth with their skin on and bones in (to be discarded after cooking). Alternatively, follow the traditional method and use a whole chicken instead. Chicken breasts are not an ideal choice but can be used as a substitute if you’re on a lean meat diet.

Mushrooms

Dried shiitake mushrooms are an excellent source of rich fragrance and umami taste. Read my shiitake guide to learn more about this magic ingredient. If you have difficulty sourcing them, use fresh shiitake or other types of mushrooms to substitute.

Noodles

Most often I use thin, plain wheat noodles for chicken noodle soup. But other types of noodles work well for this recipe too, such as egg noodles, ramen noodles, udon noodles, or rice noodles found in Yunnan Rice Noodle Soup, etc.

Shop-bought dried noodles (known as Guà Miàn/挂面 in Chinese) are a quick solution. Make fresh ones from scratch if you’d like to go the extra mile (Try my recipes for Easy Knife-Cut Noodles, Hand-Pulled Noodles, and Ramen Noodles).

Vegetables

Apart from protein and carbohydrates, you’d need some vegetables too. Leafy greens, such as bok choy, spinach, and Chinese broccoli, are classic choices. If using vegetables like carrots, daikon, winter melon, etc, slice them thinly and cook in the chicken broth (instead of blanching with the noodles).

Aromatics & seasonings

For chicken broth, ginger, scallions (green onions/spring onions), and Shaoxing rice wine are commonly used to add aroma and eliminate the gamey taste of the meat.

Use simple seasonings that don’t overpower the natural taste of the broth. Basic Chinese pantry condiments like light soy sauce, white pepper, sesame oil, and salt are all you need. Optionally, add a dash of homemade chili oil for an extra kick on the palate.

Cooking steps

Once you’ve gathered all the above ingredients, follow these simple steps to cook:

Step 1: Rehydrate the mushrooms

Soak dried shiitake mushrooms in water until they become soft and plump (overnight or at least 4 hours). Remember not to dump the water as it will be used in the next step.

Step 2: Simmer the chicken

Put the chicken legs (or thighs) in a pot. Add the rehydrated mushrooms along with the soaking water from step 1 (do it gently and discard any residue at the bottom of the bowl).

Bring it to a full boil. Use a spoon to skim off any foam appearing on the surface. Add Shaoxing rice wine, ginger, and the white part of the scallions (keep the green part for garnishing).

Turn the heat to the lowest and cover the pot with a lid. Leave to simmer for 30 minutes. Pierce the thickest part of the chicken with a chopstick. If it goes in without much resistance, it’s done.

Step 3: Season the broth

Take out the chicken pieces to cool on a plate. Remove the ginger and scallions. Season the broth with light soy sauce, salt, white pepper, and sesame oil. Taste and adjust.

Step 4: Shred the chicken

Pull off the chicken skin and discard. Tear the meat off the bones. Break it into bite-sized shreds. Set aside.

Step 5: Cook the noodles

Bring plenty of water to a full boil in a pot. Add noodles to cook. Depending on the noodle type, the time required varies. Take out one strand to check its doneness.

At the very end, add the leafy green of your choice. Blanch for about 20 seconds. Drain both the noodles and the vegetables. Rinse briefly under running water if your noodles appear a little mushy on the surface (this step is important when using rice noodles).

Step 6: Assemble the dish

Divide the noodles and vegetables into serving bowls. Pour the broth and mushrooms over. Top with shredded chicken and finely chopped scallion greens. Spice it up with chili oil if you wish.

🛎 Use Instant Pot (or pressure cooker): To speed up the cooking process and save energy, you may use an instant pot or stove top pressure cooker. Follow the same instructions and cook the chicken for 10 minutes on high pressure. Allow a natural release before opening the lid.

Make ahead

This is an ideal recipe to be made in advance. Here are my tips:

  • Cook a large batch of chicken broth using either chicken legs/thighs or a whole chicken.
  • Shred the chicken meat once cool enough to touch. Then put it back in the broth.
  • Divide into equal portions in airtight containers and freeze for up to 3 months.
  • Defrost the portion you need in the fridge then heat until piping hot. Add seasonings then assemble with freshly cooked noodles and vegetables.

Alternative methods

Depending on what’s available in your kitchen, you may alter this recipe in these ways:

  • Use ready-to-use chicken broth and add the same set of seasonings (Skip the salt and reduce soy sauce quantity if the broth is already salted). Use boiled eggs or slices of tofu as toppings as protein substitutes.
  • Tear the meat off a leftover roast chicken or smoked chicken. Then use the carcass to make the broth. Just like how I use Christmas dinner leftovers to assemble Turkey Noodles Soup.

Ingredients

  • 8 pieces dried shiitake mushrooms see note 1
  • 6 cups water
  • 2 chicken legs or 4 chicken thighs (skin on & bone in)
  • 2 tablespoon Shaoxing rice wine
  • 4 slices ginger
  • 2 stalks scallions separate the white and green parts
  • 2 teaspoon light soy sauce
  • ½ teaspoon salt
  • teaspoon ground white pepper
  • ¼ teaspoon sesame oil
  • 4 portions noodles see note 2
  • 2 heads bok choy or other leafy greens
  • Chili oil optional

Instructions

  • Put dried shiitake mushrooms in a large bowl. Pour in 6 cups (1400ml) of water. Leave to soak overnight (or at least 4 hours).
  • Put the chicken legs (or thighs) into a pot. Add the rehydrated mushrooms, along with the soaking water (leave out any residue at the bottom of the bowl). Bring to a full boil. Skim off any foam floating on the surface.
  • Add Shaoxing rice wine, ginger, and the white part of the scallions. Turn the heat to the lowest. Cover the pot with a tight lid. Leave to gently simmer for 30 minutes or so until the meat becomes very tender. You may speed up this process using an Instant Pot or pressure cooker (see note 3).
  • Transfer the chicken legs to a plate to cool. Discard the ginger and scallions. Add light soy sauce, salt, white pepper, and sesame oil to the broth. Taste to adjust if necessary.
  • Once the chicken is cool to touch, remove the skin and tear the meat into bite-sized shreds.
  • In a separate pot, bring plenty of water to a full boil. Cook the noodles over medium-high heat until fully cooked. At the very end of this process, add bok choy for a quick blanch (20 seconds).
  • Drain the noodles and bok choy. Place them into 4 serving bowls. Add the broth and mushrooms. Top with the shredded chicken and the green part of the scallions (finely chopped). Optionally, drizzle some chili oil over.

Notes

1. Dried shiitake mushrooms provide an extra umami taste. If unavailable, you may use fresh shiitake or other mushrooms to substitute. In this case, cook the chicken in water and add the mushrooms at the last 5 minutes.
2. Both dried and fresh noodles (made of wheat or rice flour) work well for this recipe. For one portion, use around 3.5oz (100g) of dried ones or about 6.5oz (180g) of fresh ones.
3. If using an Instant Pot or a stovetop pressure cooker, cook the chicken for 10 minutes. Allow natural release of the pressure.

What is egg drop soup

As its English name suggests, egg drop soup is a type of soup that involves dropping eggs into the broth. Whereas its Chinese name “Dàn Huā Tāng/蛋花汤” literally means “egg flower soup”.

I presume it refers to the flocculent appearance of the cooked eggs which resemble tiny blossoms. This particular look is achieved by slowly pouring the beaten egg into the simmering broth.

Compared to other popular Chinese soups (such as Wonton Soup, Hot & Sour Soup, etc.), egg drop soup takes very little time and effort to make. Only a few common ingredients are called for and it can be made in just a few minutes!

Like congee (Chinese rice porridge), this delectable soup is considered a “healing food” by many Chinese people. Whenever I crave something soothing and light, it’s one of the dishes that always comes to my mind.

It’s gluten-free and vegetarian-adaptable (if using vegetable broth). A single serving only counts around 90 calories.

Pro tips

Here is a quick summary of the factors that contribute to a great bowl of egg drop soup.

  • Use broth, instead of water, as the soup base.
  • Add starch to create a silky texture but do not overuse it.

Broth

Chicken broth is the most popular base for egg drop soup. Beef broth works too if you prefer its flavor. To make this dish vegetarian, substitute with vegetable broth.

🛎Substitute: Don’t have broth at hand? Try water seasoned with chicken powder (鸡精), mushroom powder (香菇精), or MSG (味精).

Like how I cook Tomato & Egg Stir-fry, I always add a little water to the eggs and then whisk lightly. This helps to get a tenderer texture, as well as thinner the consistency of the eggs making it flow smoothly when pouring.

Seasoning

You only need salt, white pepper, and sesame oil to season egg drop soup. Remember to use sesame oil sparingly to avoid overpowering the dish.

Garnishing

Use finely chopped scallions (green onions/spring onions), or chives, to brighten up the dish.

Cooking steps

Egg drop soup is one of the simplest Chinese dishes to make. However, attention to detail is required to achieve the best result. Here are the cooking procedures and tips you may find helpful.

Step 1: heat the broth

In a saucepan or small pot, bring the broth to a full boil then turn the heat down to a gentle simmer.

Step 2: Season the broth

Add salt, ground white pepper, and sesame oil and stir to distribute evenly. If your broth is already salted, you may not need extra salt. It’s always a good idea to taste and adjust.

Step 3: Add the starch

In a small bowl, mix cornstarch with water (double the volume of the starch) very well then gradually pour it into the broth while stirring with a spoon.

🛎TIP: At this stage, the soup won’t actually look “thick”. It still flows easily. Although cornstarch slurry is a key ingredient, I don’t recommend you increase its quantity. Overuse would make the soup slimy.

Step 4: Pour in the egg

This is the most technical part of the recipe. Read and follow these tips to produce small, wispy “egg flowers” (also watch the video in the recipe card below).

  • Make sure the broth is at a bare simmer before adding the egg.
  • Drizzle it in a thin stream (a jag with a pouring spout would help).
  • Slowly and gently swirl the soup with a spoon (do not swirl vigorously otherwise the egg strands will be too small turning the soup into a paste).

🛎TIP: If you prefer large “egg flowers”, follow the same instructions to pour the egg but don’t swirl the soup.

Step 5: Garnish and serve

Spoon the soup into serving bowls and sprinkle finely chopped scallions to garnish. Enjoy while it’s warm.

You can keep leftovers in an airtight container in the fridge for 2 days. Reheat until piping hot but avoid overcooking to retain the egg’s tenderness.

I don’t recommend you freeze the soup as the texture of the egg strands tends to become a little rubbery. But you can freeze the seasoned, thickened broth. Defrost and heat it then pour in the egg before serving.

What to serve with

Honestly, I can eat egg drop soup at any time of the day. The pairing options are endless but here are some of my favorite ways to serve it.

Besides this classic version, Chinese egg drop soup has many other variations with extra ingredients. The favorite in our Red House is Tomato Egg Drop Soup (see image above) which has a tangy and umami taste.

Recipe FAQs

Q: Why is my soup not as yellow as the ones in Chinese restaurants?

A: It’s not a secret that restaurants use turmeric or food coloring to make egg drop soup look yellower (more appetizing). You can do the same.

Q: Why don’t you use soy sauce to season the soup?

A: It’s simply because egg drop soup tastes wonderful without the addition of soy sauce. That said, please feel free to add some if you wish. Start with a few drops then taste to adjust.

Q: Is it ok to skip cornstarch?

A: You may leave out cornstarch if you aren’t keen to create the most authentic look and texture. My recipe for tomato egg drop soup doesn’t use starch, but it still tastes great.

Q: Can I use flour to thicken the soup?

A: I don’t think flour is an ideal substitute for this recipe as it makes the soup cloudy and opaque.

Ingredients

  • 3 large eggs
  • 4 cups chicken broth or vegetable broth (see note 1)
  • Salt to taste
  • Ground white pepper to taste
  • ¼ teaspoon sesame oil
  • 3 tablespoon cornstarch
  • 1 stalk scallions finely chopped

Instructions

  • Crack the eggs then add 2 tablespoons of water. Beat lightly until the whites and yolks are fully integrated. Set aside.
  • Pour the broth into a saucepan/pot. Bring it to a full boil then turn the heat down to a gentle simmer.
  • Season the broth with salt, white pepper, and sesame oil. Taste to adjust.
  • In a small bowl, mix cornstarch with 6 tablespoons of water until combined (make sure no starch sinks to the bottom). Gradually pour it into the broth while stirring with a spoon.
  • Turn the heat to the lowest so the broth is at a bare simmer. Pour the beaten eggs in a thin stream while slowly swirling with the spoon.
  • Transfer the soup to individual bowls. Garnish with scallions and serve immediately.

Notes

1. If the broth is unavailable, you may use water flavored with chicken powder, mushroom powder, MSG, etc.
2. You may not need to add salt if the broth you use is already salted.
3. Tip on the color: If you’d like to achieve the bright yellow color you often find in restaurant versions, add some turmeric powder while heating the broth.
4. Store and reheat: Leftover soup can be stored in the fridge for 2 days. I don’t recommend you freeze egg drop soup as the egg changes texture this way. You may freeze the seasoned, thickened broth. Defrost, reheat and add the egg before serving.

Are you looking for an easy, tasty, healthy all-in-one dish? How about a bowl of Chinese wonton soup? It’s one of the most loved meals in our Red House. Having been making this recipe for years, I have many tips and tricks to share with you.

What is wonton soup

Chinese Wonton soup consists of stuffed savory parcels known as wontons (Hún Tun馄饨 or Yún Tūn/云吞) and a lightly seasoned broth which is often accompanied by blanched leafy greens. With protein, starch and vegetables all in one bowl, it makes a complete meal with only 450 calories per serving.

There are many varieties of wonton soup in different regions of China. They differ in wrapper types, filling ingredients and broth seasonings. The Cantonese style also has a version including noodles.

By the ways, wontons can also be served without broth. For example, Sichuan Chili Oil Wontons are boiled, drained then coated with a sauce, whereas Fried Wontons are enjoyed alone, or with a dipping sauce.

Why this recipe

The wonton soup recipe I’m sharing today is a quick and easy one. No matter if you are a novice home cook or a busy parent, my detailed explanation and tips will help you to make it without stress (highly likely you’ll cook it again and again). 

Before I talk about the ingredients and cooking steps, here are my top tips to keep in mind.

  • Use ready-made wrappers to save time
  • Make a juicy filling by incorporating broth into the meat
  • Use shop-bought broth if you’re in a rush but making your own is easy
  • Assemble a big batch of wontons and freeze them for future use

Ingredients

This recipe calls for three groups of ingredients:

  • Wonton wrappers (aka wonton skin, wonton pastry)
  • For the filling: ground pork, scallions (aka green onion/spring onion), ginger, soy sauce, Shaoxing rice wine, salt and white pepper
  • For the soup: chicken broth (homemade or shop-bought), salt, white pepper, sesame oil and baby bok choy

Substitutes

  • Although pork is a popular filling for Chinese wontons, please feel free to substitute it with chicken, shrimp or beef.
  • If you don’t have white pepper, use ground Sichuan pepper or five spice powder.
  • Chicken broth can be replaced by beef or vegetable broth. A simple homemade chicken stock recipe is available in later sections.
  • Apart from bok choy, please feel free to use other leafy greens, such as spinach, choy sum, etc.

Filling variations

There are many ingredients that can go into wonton fillings. Apart from the protein substitutes mentioned above, you can also use tofu, eggs, vegetables, shiitake mushrooms, etc. Please find more filling ideas in my collection of dumpling recipes.

Choose the wrappers

Essentially, wonton wrappers are square-shaped, very thin sheets of wheat flour-based dough that are used to wrap fillings into sealed parcels. Don’t confuse them with dumpling wrappers for making Jiaozi/饺子 or Shumai/烧卖 that are round-shaped and slightly thicker.

Varieties

You can make wonton wrappers from scratch with a pasta machine. Alternatively, use ready-to-use ones found in Chinese/Asian stores. They come in different sizes ranging from 9cm (3.5in) to 10.5cm (4.2in). Also, you can find them in two colors.

  • The yellow ones are often referred to as Cantonese or Hong Kong style. They contain eggs and/or lye water thus they have a yellow tone. 
  • The white ones are often referred to as Shanghai style or northern style. They usually are eggless (vegan) and slightly thicker.

Both yellow and white wrappers are good for today’s recipe. If they’re labeled with various thicknesses, choose the thin or medium version and avoid the thick ones as they tend to be too doughy.

Using

If you have fresh, chilled wrappers, use them as soon as possible or freeze them straight away after purchasing. If you have frozen ones, defrost them in the fridge overnight.

Since wonton wrappers have fairly low water content and dry out easily, always make sure not to open the package until you’ve prepared the filling and are ready to assemble. Cover them with a damp cloth to avoid drying out.

Prepare the filling

A perfect wonton filling should not only be flavorsome but also tender and moist. Using minced meat with a higher fat content would make it taste less dry. But the more important trick is to incorporate liquid, either stock or water, into the meat.

As I explained in my Dumpling Filling Guide, this specific process is called Dǎ Xiàn/打馅, meaning “beat the filling”.

  • Put all the ingredients for the filling into a bowl then add a few spoonfuls of chicken stock.
  • Use chopsticks to mix and swirl the meat constantly. After a while, the liquid will be fully absorbed and the meat will become tender and sticky.

Wrap the wontons

Compared to the way you fold Chinese dumplings, wontons are easier and quicker to assemble. For today’s recipe, I follow one of the most common folding methods (Find other techniques in my post Six Ways to Fold Wontons).

  • Dip your fingertip or the back of a small spoon in the water then run it along the edge of a wrapper (①)
  • Put a portion of the filling mixture in the middle then fold the wrapper into a rectangle parcel. Gently press to seal all around (②)
  • Bring two corners together (③)
  • Place one on top of another and use a little water to stick them securely (④)

Cook the wontons

Cooking wontons is simple! Firstly, Bring a large pot of water to a full boil (you can use a wok too). Gently slide in the wontons and move them around with a spoon in case any sticks to the bottom.

Leave to boil over high heat. Once all the wontons rise up to the surface of the water, cook for another 1½ minutes or so.

Finally, put in bok choy (or other leafy green) to blanch for about 20 seconds.

🛎 NOTE: Depending on the size of your cookware, you may need to cook the wontons in batches. Here is how to judge: if you lay the wontons one beside another in a single layer, the area they cover shouldn’t be bigger than the cookware.

Assemble the soup

While the wontons are being cooked, heat up the chicken stock in another pot if it’s cold. Then spoon it into serving bowls. Season with salt, white pepper and sesame oil (adjust their quantity based on your flavor preferences).

Add freshly cooked wontons to the soup, along with blanched bok choy. Garnish with chopped scallions. If you enjoy spicy food as I do, a good spoonful of Chinese chili oil will give the dish an extra kick.

Sometimes, I also sprinkle extra toppings over the wontons, such as preserved mustard stem (Zhà Cài/榨菜), papery dried shrimp (Xiā Pí/虾皮), etc.

Simple homemade stock

If you have time, make the chicken stock from scratch. It’s tasty and very simple to cook.

  • Put a whole chicken in a large pot filled with cold water. Bring it to a boil then skim off any impurity floating on the surface.
  • Add 2 stalks of scallions and a few slices of ginger. Leave to simmer over low heat for 40-50 minutes. Then take out the chicken, scallions and ginger.

🛎 TIP: You can tear the chicken meat off the bones and make Sichuan Mouthwatering Chicken or add it to Chow Mein, Fried Rice, etc.

Make ahead and freeze 

Want to have wonton soup regularly? Make the wontons in big batches then. Like homemade dumplings and ramen, wontons freeze very well and can be cooked straight away without defrosting.

  • Right after you fold the wontons, lay them in a single layer over a tray/baking sheet. To prevent sticking, dust the tray with flour or line it with parchment paper. Put the tray into the freezer.
  • Once the wontons become solid, take them off the tray and transfer them to air-tight bags or containers. You may store them in the freezer for up to 3 months.

Cook frozen wontons

You don’t need to defrost wontons before cooking (do not try to do that). Follow the same instructions for cooking fresh wontons. Here are two tips to follow:

  • Do not cook too many frozen wontons at once (a little less than the number for fresh ones).
  • Once you add them to boiling water, gently move them around a few times with a spoon. Since they take a longer time to float up to the surface, there is a higher chance that they stick to the bottom of the pot.

Recipe FAQs

Q: My wrappers tear easily when I try to fold wontons. How to prevent this?

A: This may be caused by a). The wrappers are too dry, or b). You’ve added too much filling. To improve, always cover the wrappers with a damp towel after they’re taken out of the packaging. Put a little less filling in each wonton and be extra gentle when folding, pressing and sealing them.

Q: Can I boil wontons directly in the chicken stock, instead of in another pot of water?

A: Technically you could, but it’s not recommended. The stock would become starchy, in terms of look and taste, if it’s used to cook wontons. 

Q: I don’t have chicken stock at hand. Any other ways to serve these wontons?

A: Yes, here are three options: Season them with the sauce for Sichuan Chili Oil Wontons; make a hot and sour broth used for Beef Dumpling Soup; or serve them with dumpling sauces.

Q: How many wontons shall I serve for one person?

A: For adults, I usually add 8 to 12 wontons to each bowl of soup depending on their appetite and the size of the wontons. You may also add egg noodles to the soup to make it more filling.

Ingredients

For the wontons

  • 300 g ground pork or chicken, shrimp, beef
  • 2 stalks scallions finely chopped
  • 1 teaspoon ginger minced
  • 1 tablespoon light soy sauce
  • 1 teaspoon Shaoxing wine
  • ¼ teaspoon salt
  • 1 pinch ground white pepper or ground Sichuan pepper, five-spice powder
  • 3 tablespoon chicken broth homemade or shop-bought (see note 1)
  • 40 pieces wonton wrappers homemade or shop-bought (see note 2)

For the soup

  • 1 liter chicken broth homemade or shop-bought (see note 1)
  • 2 heads baby bok choy or other leafy greens
  • Salt to taste
  • Ground white pepper to taste
  • Sesame oil to taste
  • Scallions finely chopped
  • Chili oil optional

Instructions

Mix the filling

  • Add ground pork, scallions, ginger, light soy sauce, Shaoxing wine, salt, white pepper and 3 tablespoons of chicken stock to a mixing bowl. Swirl constantly to combine until the meat fully absorbs the liquid and becomes a sticky paste.

Wrap the wontons

  • With your fingertip, wet the edge of a wonton wrapper with a little water. Place some pork filling in the middle. Fold the wrapper into a rectangle. Press to seal the edge. From the folded side, wet one corner then place the other corner on top. Press to seal (see video below).

Heat the broth

  • In a saucepan, heat the chicken broth to a boiling point. Set aside for later use.

Cook the wontons

  • While the broth is heated, bring plenty of water in a separate pot/wok to a full boil. Gently put in the wontons. Move them around with a spoon to avoid sticking. You may need to cook them in batches (see note 3).
  • When the wontons rise from the bottom and float on the surface, continue boiling for a further 1½ minutes or so. Put in bok choy and cook for another 20 seconds.

Assemble the dish

  • Add salt, ground white pepper and sesame oil to 4 serving bowls, then top up each one with the heated broth. 
  • Fish out the wontons and bok choy and put them to the bowls. Garnish with scallions and chili oil (if using).

Make in advance

  • You may freeze uncooked wontons right after they’re assembled (Do not leave them on the counter for too long). Lay them in a single layer on a tray lined with parchment paper. Once completely frozen, transfer them to airtight bags or containers.
  • Cook frozen wontons: Do not defrost. Follow the same method above.
