Hi Fred! You can use other types of fermented bean curd for this recipe. Yes, you’d need to adjust the quantity as each type has different level of saltiness.

Hi Wei,

I made your recipe and I liked it very much. Do you think that I can also use red fermented bean curd i.o. the white ones for this recipe? And if so, I assume that in that case I should use only 2 or 2.5 cubes of the red cubes, since red fermented bean curd has a much stronger (and different) flavour than white fermented bean curd, right?
