I made these red bean bao buns – not a difficult recipe with very clear directions. They are delicious! They are also a great snack to keep in the fridge and only needing a quick steam to get piping hot soft and slightly sweet treat. At last I can make these exotic steamed buns!

Your comment made me smile, Katie! 😄 Over-kneading can definitely make the dough a bit dense, but I love your enthusiasm! Using store-bought bean paste is totally fine—whatever makes the process enjoyable for you. So glad you still enjoyed the buns, and I’ll be here cheering you on whenever you’re ready to try making the paste from scratch. Thanks for sharing!

I think I kneaded it too much and too many times in a fit of ADHD distraction. It made the dough yellow and kind of like pretzel dough instead of the soft fluffiness I was going for. I also used store bought bean paste because I don’t have the energy to do from scratch, but one day I will! Still amazingly delicious, thank you!

You can surely use pumpkin puree to replace red bean paste. In this case, the mashed pumpkin should be on the dry side. If it appears to be too soft/wet, you can use the same method-frying it over low heat in a skillet without any oil-to remove some of the moisture. Hope this helps!

I steam them directly from the freezer (just for longer) and they’re also really good airfried direct from the freezer. Thank you very much for this recipe!!

I have a question on modifications please: if I would like to make pumpkin baos, could I use this recipe (replacing the red bean paste with mashed pumpkin) and just add pumpkin mash to the bao dough? Or should I reduce the amount of water accordingly?
