In reply to Adrian Havers. I totally agree with you, Adrian! Good lamb with a high fat content is key. In my hometown of Lanzhou, where the lamb is of high quality, salt is often the only seasoning you need for a lamb dish.

yeah i didnt mind some different flavors . There was some uyghur guys there too cooking them up using just cumin and chilli. was amazing with the simple flavours. I think the key is the fat. Ive used lean meat and it gets too dry,

Just got back from china for 8 weeks i’ve noticed they’re including sesame seeds now. Some other places were adding fennel too .
