Thanks for trying my recipe, and sorry to hear the texture wasn’t as you expected! It sounds like both the dough and the filling might be lacking moisture. Did you measure all the ingredients precisely? If the amount of eggs in the filling or the milk or oil in the dough is less than required, it can result in a tough dough or a dry filling. I hope your next attempt turns out better!

I haven’t tried making them with salted butter. But I don’t think it would dramatically change the overall taste (some might find it nicer as it balances the sweetness). You can also slightly increase the powdered sugar to compensate. Wish you a happy Mid-Autumn Festival and hope you enjoy making these mooncakes.
