One of my favorite recipes to make. I’ve played with the amount of chillies, peppercorns, chilli powder and chilli bean paste to find the “sweet spot” as my wife is not a big fan of the Sichuan peppercorns. I end up reducing the chillies and chilli powder from the recipe while cooking and add some of the roasted chillies and peppercorns at the end with some sizzling oil on my serving.

In reply to Michelle. In my recipes, chili powder refers to finely ground dried chili which doesn't contain salt or other spices. You can use gochugaru which is Korean-style ground chili.

Whenever I go to a Sichuan restaurant, I order this, I finally worked up the courage to make it myself. It’s so freaking good .. this is my new go to. Although I didn’t see the directions on how long to cook it so my fish overcooked a tiny bit. The fish cooks fasssst. Still delicious, great recipe
